Yes, we know it’s pumpkin pie season. Yes, we know how good pumpkin pie is. But, have you tried pecan pie?

Unlike its gourd-based friend that loses appeal after the holiday season, pecan pie is a crowd-favorite dessert year-round. With a sweet molasses filling, buttery crust, and the delectable crunch of the pecans, who wouldn’t indulge in this delicious dessert?

(Besides those with a nut allergy, that is!)

But, we’ll be honest, any same ol’ pie recipe gets… well, old. That is why we’ve partnered with our friends at Fisher® to make these 5 twists on the beloved dessert. With the sweet, delightful Pecan Cookie and the tasty and creative Pecan Chocolate Hand Pies, your friends and family will be surprised when you bring one of these unique recipes to the dinner table!

Pecan Cookie

Pecan Cookie

Difficulty: Easy • 9 Servings • Total Time: 45 Minutes

Ingredients:

Cookie

  • ½ cup butter, softened 
  • ⅓ cup oil vegetable oil
  • ½ cup granulated sugar
  • ¼ cup powdered sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 ⅓ cup all-purpose flour
  • ¼ teaspoon salt
  • 1 teaspoon baking powder

Pecan Pie Filling

  • 5 tablespoon butter
  • ⅔ cup brown sugar
  • 1¼ cup chopped Fisher® Pecans
  • 1 teaspoon vanilla extract
  • ⅓ cup heavy cream
  • ½ teaspoon cinnamon
  • 1 pinch salt

Directions:

  1. Preheat the oven to 350F then line a baking sheet with parchment paper and set aside. 
  2. Cream the butter, oil, sugar, and powdered sugar in a large mixing bowl or a stand mixer. 
  3. Add the egg, and vanilla extract, and mix until combined. 
  4. Add the flour, salt, and baking powder and mix until combined, using a large cookie scooper, scoop out 9 equally sized cookie balls, place them on the prepared baking sheet, gently flatten them to about 1 inch in thickness, then using a ¼ measuring cup, press down the center of the cookie to make room for the pecan pie filling. 
  5. Bake for 16 minutes or until done then cool on the baking sheet.

Make the pecan pie filling. 

  1. In a medium saucepan over medium heat, mix the butter, brown sugar, and pecans until the butter and sugar are dissolved. Make sure to stir from time to time to get all of Fisher® pecans are coated in the buttery sugar mixture. You want the mixture to bubble for 1-2 minutes. 
  2. Add in the cinnamon nutmeg, salt, heavy cream, and vanilla, and whisk to combine. 
  3. Remove from heat, and top the cookies with the pecan pie mixture. Let it cool down for 20-30 minutes then enjoy!

Apple Caramel Slab Pie

Apple Caramel Slab Pie

Difficulty: Medium • 12 Servings • Total Time: 2 Hours

Ingredients:

Pecan Pie Dough

  • 2 ½  cup Fisher® Pecans
  • 2 ½ cup unbleached all purpose flour
  • ½ cup light brown sugar
  • ½ teaspoon kosher salt
  • 1 cup unsalted butter, cut into pieces (ice cold)
  • 2-3 tablespoons ice water, as needed

Apple Caramel Slab Pie

  • 2 granny smith apples
  • 4 Honeycrisp apples
  • 1 ½ cups store bought caramel sauce

Directions:

  1. Blend all pie dough ingredients into a food processor until it comes together. 
  2. Flatten into a 9×11 baking pan and chill.
  3. Preheat the oven to 400F and slice apples.
  4. Evenly distribute caramel sauce on the bottom of the pie. Place apples in one layer.
  5. Bake for 40-50 minutes or until golden brown. Cool and serve with ice cream, if desired.

Twice Baked Sweet Potato

Twice Baked Sweet Potato

Difficulty: Easy • 4 Servings • Total Time: 90 Minutes

Ingredients:

  • 2 medium sweet potatoes
  • 2 tablespoons olive oil
  • 2 tablespoons coconut oil
  • 1 teaspoon ground cinnamon
  • 4 tablespoons maple syrup
  • ½ cup Fisher® Pecans, chopped

Directions:

  1. Preheat oven to 450F. Drizzle sweet potatoes with olive oil then we wrap in aluminum foil. Bake for about 60 minutes or until soft.
  2. Cut sweet potatoes in half lengthwise. Scoop out the middle of the sweet potato, being careful not to rip with skin. 
  3. Mix sweet potato with coconut oil, cinnamon and salt. Evenly divide the mixture back into the sweet potato. Mix pecans with maple syrup and divide evenly on top of the sweet potato.
  4. Lower the oven to 375 F. Bake for another 15 minutes.

Pecan Chocolate Hand Pies

Pecan Chocolate Hand Pies

Difficulty: Easy • 12 Servings • Total Time: 30 Minutes

Ingredients:  

Chocolate Pecan Filling

  • 4 tablespoons unsalted butter, cubes
  • 3 cups dark chocolate
  • 2 cups Fisher® Pecans, chopped
  • ½ cup dark brown sugar
  • Maldon salt, as needed

Directions:

  1. Melt the chocolate and butter in the microwave. Mix in sugar and Fisher® Pecans.
  2. Roll out pre-made dough and cut into 4 inch circles. Put in 2 – 2 ½ tablespoons of filling into pie dough. Fold in half and crimp.
  3. Preheat the air fryer to 350F. Place 3 hand pies into an air fryer and air fry for 10 minutes or until the crust is golden brown. Freeze the rest of the hand pies. 

Hot Honey Pecan Pie

Hot Honey Pecan Pie

Difficulty: Easy • 12 Servings • Total Time: 2 Hours

Ingredients:

Hot Honey

  • 8 dried chili peppers
  • 2 tablespoons dried chili flakes
  • 1 ½ tablespoons apple cider vinegar
  • 2 cups honey

Pie Dough

  • 1 ¼ cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup cold unsalted butter, cubed
  • 2 to 4 tablespoons ice water

Pecan Pie Filling

  • 6 large eggs
  • ½ cup light brown sugar
  • ½  cup granulated sugar
  • 2 cup maple syrup
  • 3 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 ½ cups Fisher® Pecans

Directions:

Hot Honey

  1. Place chili peppers, flakes and apple cider vinegar into a mason jar. Add warm honey into the jar. Let it sit overnight. The longer you let the honey sit, the spicier the honey will be.
  2. Strain the honey when spice level is reached.

Pie Dough

  1. Combine flour, salt and butter into a food processor until the mixture is crumbly. Add cold water and pulse until dough comes together into a ball. 
  2. Roll out into a disk, cover with plastic and refrigerate for 30 minutes.
  3. Roll dough into a circle with ¼ inch thickness. Place onto 9-inch pie pan, cut off excess dough and crimp. Brush egg whites on the edge of the pie dough. Place into the refrigerator.

Pecan Pie Filling

  1. Preheat the oven to 350 F. 
  2. Mix all ingredients except Fisher® Pecans. Pour into pie shell.
  3. Arrange Fisher® Pecans as desired on top of the filling.
  4. Bake for about 50-60 minutes or until done. Let chill and serve with ice cream or whipped cream.
