Raspberry Dome Cakes

  1. First, make the raspberry jam. In a saucepan over medium heat, bring raspberries, sugar, and lemon juice to a boil. Let it cool, then set aside.
  2. In a large bowl, beat the cream cheese until smooth and creamy.
  3. Add condensed milk and half-and-half to the cream cheese. Continue beating until all ingredients are well incorporated.
  4. Hydrate the gelatin according to package instructions. Then, add it to the cream cheese mixture and mix again. Place in the fridge while completing the next step.
  5. Preheat the oven to 300ºF. Prepare the cake mix according to instructions on the box, pour the batter onto a lined rectangular tray, and bake for 15 minutes. Remove from oven and let cool.
  6. Use a circular cookie cutter to cut the rectangle into small cakes.
  7. In a hemisphere mold, pour a bit of the raspberry jam, then the cream cheese mixture, and top with the cake.
  8. Refrigerate for 30 minutes.
  9. To make the ganache, mix melted white candy, heavy cream, and food coloring.
  10. Pour to cover the cheesecake with the ganache. Decorate and enjoy!

  4. Pour the mixture over the pie crust and refrigerate for 2 hours.
  5. Decorate and enjoy!

  3. In a large mixing bowl, beat softened butter and remaining ½ cup sugar with an electric mixer on high speed until fluffy, about two minutes.
  4. Add the egg and vanilla, mix at medium speed until pale and fluffy, 1-2 minutes.
  5. Slowly add the flour mixture to the wet ingredients. Mix at low speed just until the dough comes together.
  6. Fold in the cooled blueberry jam.
  7. Bake the cookies for 10 minutes. Let them cool, and enjoy!

Crème brû-Lemon

  1. Cut the lemons in half vertically and remove all the pulp, preserving the lemon shells.
  2. Place the cream and sugar in a saucepan. Heat over medium heat, stirring to dissolve the sugar. When fine bubbles appear on top of the heavy cream, remove it from the heat.
  3. Add lemon zest and lemon juice.
  4. Let the mixture cool for 10 minutes, then pour it into the lemon shells.
  5. Cover each with a sprinkling of sugar and flambe with a torch to create a caramelized crust. Enjoy!
