Make the Most Out of Your Mornings By Eating a Balanced Breakfast with Almond Breeze® x So Yummy

We’ve heard it over and over again, “Breakfast is the most important meal of the day!” There are countless benefits from eating a wholesome meal first thing in the morning, such as replenishing your body’s supply of glucose to boost energy levels and alertness. Sometimes a black cup of coffee isn’t going to cut it, so try adding our new breakfast recipes into your regular routine!

We worked with our good friends from Blue Diamond® to create an array of easy morning meals that are nutritious and delicious. The diverse line of Blue Diamond® products makes it effortless to incorporate all of the healthy fats, fiber, and protein almonds have to offer. Whip up a batch of our Banana Pancake Bites to start your day with the complex carbohydrates you need to stay energized! Our other recipes, like the Cereal Milk Waffles or the Breakfast Parfait Pops, provide a playful and tasty take on a few breakfast classics.

Banana Pancake Bites

So Yummy

Easy • Yields 6 servings • Total time: 25 minutes 

 

Ingredients: 

  • 3-5 bananas
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 2 tablespoon honey
  • 5-7 tablespoon Almond Breeze® Original Almondmilk
  • 1 1/2 cups Blue Diamond® Almond Flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • Optional: maple syrup

 

Directions: 

  1. Cut bananas into ½ inch thick coins.
  2. Whisk together Blue Diamond® Almond Flour, salt, baking soda and cinnamon in a medium bowl.
  3. In a large bowl, whisk together eggs, vanilla, honey and 5 tablespoons Almond Breeze® Original Almondmilk.
  4. Mix dry ingredients into wet ingredients until well combined. If the mixture is too thick, add more Almond Breeze®, a little at a time, up to 2 more tablespoons. The consistency should be thicker than normal pancake batter, but should still be easily spreadable.
  5. Grease a non-stick skillet or griddle and place over medium-low heat.
  6. With a fork, gently dip the banana slices individually into the batter, coating the entire slice. Allow excess batter to drip back into the bowl before placing the banana on the skillet.
  7. Fill the skillet with the banana pancake slices, flipping after a couple of minutes. The pancakes are ready to flip when bubbles form on the bottom and pop. Repeat the process until you finish cooking the desired amount of banana pancake bites, or until the batter runs out.
  8. Top banana pancake bites with maple syrup, or dip them in syrup individually.

 

Cereal Milk Waffles

Easy • Yields 4-6 servings • Total time: 25 minutes 

 

Ingredients: 

Cereal milk

  • 1 cup fruity cereal, like Fruity PEBBLES™
  • 1.5 cups Almond Breeze® Original Almondmilk

Waffle batter 

  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 2 tablespoon honey
  • 5-7 tablespoon reserved cereal milk made from Almond Breeze® Original Almondmilk
  • 1 1/2 cups Blue Diamond® Almond Flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • ½ cup crushed fruity cereal
  • Optional: Almond milk non-dairy whipped topping
  • Optional: Maple syrup

 

Directions:

  1. To make the cereal milk: pour fruity cereal and Almond Breeze Original Almond Milk into a bowl. Enjoy the cereal and reserve the remaining milk for the batter.
  2. In a medium bowl, combine the wet ingredients with a whisk.
  3. In a large bowl, combine the dry ingredients.
  4. Pour the wet mixture into the dry mixture and mix with a large spoon or rubber spatula until well combined.
  5. Ladle the batter onto a heated and greased waffle iron. Do not overfill. Close the waffle iron and cook for the amount of time given for your specific waffle iron, or about 2-5 minutes.
  6. When the waffle is golden brown, carefully remove it from the iron with a spatula or tongs. Repeat the cooking process until all batter has been cooked.
  7. Top waffles with maple syrup and/or almond whipped topping if desired.

 

Breakfast Parfait Pops

So Yummy

Easy • Yields 6 servings • Total time: 4 hours 

 

Ingredients:

  • 1 ½ cups plain Greek yogurt
  • ½ cup Almond Breeze® Unsweetened Vanilla Almondmilk
  • 2 tablespoons honey & more for drizzling
  • 1 ½ cups fresh berries
  • 1 cup granola

 

Directions:

  1. In a medium size bowl, mix together the yogurt, Almond Breeze® Unsweetened Vanilla Almondmilk, and honey until combined.
  2. To assemble the pops, layer the granola, yogurt and berries evenly among 6 popsicle molds. Place popsicle sticks into the tops of the mold and freeze until firm, at least 4 hours.
  3. To remove the popsicles, run the mold under warm water for 10-20 seconds, then gently pull the popsicles out of the molds. Store in the freezer until ready to eat. Drizzle with extra honey if desired.

 

Omelet in a Bag

So Yummy

Easy • Yields 8 servings • Total time: 2o minutes 

 

Ingredients:

  • 2 eggs
  • 2 tablespoon Almond Breeze® Unsweetened Vanilla Almondmilk
  • ¼ cup deli ham, finely diced
  • ¼ cup Bell peppers, finely diced
  • 1 tablespoon chives
  • ¼ cup shredded Cheddar cheese
  • Salt and pepper to taste

 

Directions:

  1. Bring a medium pot of water to a boil.
  2. In a quart-sized plastic bag, add all of the ingredients. Seal the bag tightly, being careful to remove all excess air. With your hands, gently squeeze the bag several times to mix the ingredients thoroughly.
  3. Lower the bag into the pot of boiling water, resting the top of the bag over the side of the pot. Boil for about 15 minutes, less if you prefer a runnier omelet.
  4. Remove the bag from the pot and let sit and cool for a few minutes before handling. Once cool enough to handle, open the bag and gently push the omelet onto a plate.
  5. Top with extra salt, pepper and chives, if desired.

 

Baked Oats

So Yummy

Easy •  Yields 2-3 servings •  Total time: 40 minutes  

 

Ingredients:

Baked Oats

  • 1 cup rolled oats
  • 1/2 cup Almond Breeze® Unsweetened Vanilla Almondmilk
  • 1 banana
  • 1 egg
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey or maple syrup
  • Pinch of salt

 

Flavor: Lemon Blueberry

  • 1 lemon
  • 10-15 blueberries
  • Raw sugar

 

Flavor: Chocolate Almond Butter

  • 1 tablespoon cocoa powder
  • 10-15 semi-sweet chocolate chips
  • 1 tablespoon almond butter

 

Flavor: Raspberry Almond

  • 5-10 raspberries
  • 10-15 Blue Diamond® sliced almonds

 

Directions: 

  1. Preheat the oven to 375 degrees Fahrenheit. Combine all the ingredients for the base of the baked oats in the blender and blend for 1 minute.
  2. Grease 2-3 small ramekins with cooking spray, then pour the batter into the ramekins. Mix in and top with ingredients from the flavor(s) of your choice.
  3. Bake for 20-30 minutes, or until a toothpick poked in the center comes out clean. Remove from the oven and allow to cool for a few minutes before enjoying warm!
