Breakfast Spam Musubi

Breakfast Spam Musubi

Difficulty: Easy • 6 Servings • Total Time: 25 Minutes

Ingredients:

  • 1 can Spam
  • 2 tbsp Soy Sauce
  • 1 tbsp Mirin
  • 2 tsp Oyster Sauce
  • 1 ½ cups Sushi Rice
  • 2 cups Water
  • 1 tbsp Mirin
  • 3 no. Eggs
  • 2 sheets of Nori (roasted)
  • Water and brush
  • 3 Eggs (for egg wash)
  • 3 cups of Panko Bread Crumbs
  • Oil for frying
  • Yum-Yum sauce for garnish

Directions:

  1. Crank open your can of Spam but save the lid! You can straighten it and use it to slice the spam inside the can into perfect portions for your Musubi. Save the can and clean it out, wiping it dry.
  2. In a pan on medium-high heat, sear off your slices of Spam until they develop a gorgeous texture on either side. Whilst they cook, mix your Soy, Mirin and Oyster Sauce together in a bowl. When the Spam is seared, add over the sauce and let it thicken up and cook to the Spam slices, making sure to flip them to completely coat. Set aside.
  3. Cook your Sushi rice with 2 cups of Water until fluffy. Drizzle 1 tbsp Mirin over it and fluff together. Cling wrap the inside of your Spam can well. Take your Spam can lid and bend it 90 degrees to for an “L”. Add some cooked rice into your cling wrapped Spam can and use your bent lid to push it down into a perfectly shaped rice cake! Remove and set aside.
  4. Beat your eggs together using chopsticks (or a whisk) and cook it in a pan at low-medium heat. Cover with a lid to ensure cooking throughout and maximum fluffiness. Fold over your cooking egg like an omelet and let it cook together for +-3 minutes. Remove the lid from the pan and using your Spam Can as a mold cutter, cut out the perfectly sized omelet cake! 
  5. Lay down your Nori sheet. In the center place down your Rice cake. *Here, if your nori isn’t to size, simply use a pair of scissors to trim it so the left and right edges up to the edges of your rice cake. Place your Seasoned Spam on top of the rice cake and then your egg on top of that. Fold over your Nori and using your brush and water, seal the top side to the bottom well to have your wrapped Musubi!
  6. Oh but we’re not done yet! Beat together your egg wash and roll and coat your Musubi together with the egg wash and then the Panko.
  7. Heat your oil to 350F and fry off your Musubi for +- 5 minutes, until you start to see the Panko turn a gorgeous golden brown.
  8. Let dry, slice, drizzle with Yum-Yum sauce (or a sauce of your choosing) and enjoy!
