Coffee & Donut Waffle Tower

Difficulty: Easy • 4 Servings • Total Time: 45 Minutes

Ingredients:

Coffee Buttercream

  • 2 Tbsp cooled drip coffee or espresso
  • ¼ cup softened butter
  • ½ cup powdered sugar

Dalgona

  • 2 shots of fresh, hot espresso
  • 2 Tbsp white sugar

Coffee Syrup

  • ½ cup coffee grounds
  • ½ cup white sugar
  • 1 cup boiling hot water

Assembly

  • 1 dozen donuts, any kind
  • Mixed berries
  • Cool Whip

Special Equipment:

  • Pour Over coffee maker
  • Piping bag + tip

Directions:

  1. Heat up a standard waffle iron. Place 2-4 donuts (depending on how big your waffle iron is) inside and press down. Your donuts are done when they’re crispy and slightly golden. Remove from waffle iron and set aside to cool.
  2. Make buttercream: Add softened butter and powdered sugar to your cooled drip coffee or espresso and whisk until semi-firm. Allow to chill in the fridge to further firm up.
  3. Make dalgona: Whisk hot espresso with white sugar until light and frothy. This will take several minutes. Set aside.
  4. Make coffee syrup: Put coffee grinds into a pourover pitcher with a filter. Add white sugar. Pour boiling hot water over the coffee and sugar until you have about ¼ cup of syrup. Toss grinds and sugar and cool the syrup in the fridge.
  5. Grab your serving tray and arrange your mixed berries around the edge of the serving tray, creating a circle.
  6. Grab buttercream out of the fridge and put into a piping bag with the tip of your choosing.
  7. Pipe a dollop of buttercream in the center of your serving tray. Land a waffle donut on top. Pipe buttercream in any pattern you wish on top of the waffle donut. Repeat this pattern as many times as you can. See how high you can stack it!
  8. Pour your dalgona on top of your waffle tower. Add a dollop of Cool Whip. Pour your coffee syrup on top, adding as much as you desire. Top with a few berries and dig in!
