Have pumpkins leftover from Halloween? Use them to make your Thanksgiving dinner with this Pumpkin Chicken recipe! Turkey is a little overrated anyway, right?
Pumpkin Chicken
Difficulty: Easy • 6 Servings • Total Time: 110 Minutes
Ingredients:
1 Whole Chicken
1 Large Pumpkin
¼ cup Olive Oil
1 cup of Green Beans
1 cup Sliced Onions
5 springs of Thyme
6 cloves of Garlic (Peeled)
1 large Orange (neatly sliced)
Hand Mixer
Silicone Brush
For Glaze
¼ cup Balsamic Vinegar
2 large Onions (puree’d)
¼ cup Orange Juice
2 sprigs Thyme Leaves
3 tbsp Paprika
2 tbsp Salt
2 tbsp Olive Oil
3 tbsp Honey
Directions:
Preheat your Oven to 350°F.
Cut open a lid on your Pumpkin. Using a hand mixer, blend the inside of your pumpkin, making sure to brush against the sides of the pumpkin to completely clean it out. Remove the insides and using a silicone brush, brush the inside of your pumpkin with olive oil. Add your sprigs of Thyme, then fan out your orange slices, then your sliced onions and finally a layer of green beans.
In a pyrex, blend together your Glaze ingredients with an immersion blender until smooth and sticky.
Clean and pat dry your Chicken. Using your glaze, coat your chicken generously with the glaze. Place your Glazed Chicken into your pumpkin, cover with your lid and bake for 85 minutes.
Serve as delightful carvings of Chicken with green beans and onions and pumpkin, an entire delicious meal!
