Rice Cooker Pancake and Milk Carton Agar Agar Pudding

Rice Cooker Pancake

Rice Cooker Pancake

Difficulty: Easy • 4 Servings • Total Time: 30 Minutes

Ingredients:

  • pancake mix
  • water
  • pam
  • 1 cup strawberries, sliced
  • ½ cup granulated sugar
  • 1 tablespoon butter, unsalted

Directions:

  1. Prepare the pancake mix using the water as instructed on the packaging.
  2. Spray the interior chamber of the rice cooker with pam. Pour in the pancake batter, and turn on to cook.
  3. While the pancake is cooking, combine the strawberries and sugar, and let sit to macerate. Once the juices have started to run, mash together into a syrup and set aside.
  4. After around 10-13 minutes, or when the top of the pancake is visibly set, turn off the rice cooker and turn out the pancake onto a plate.
  5. Top the pancake with a pat of butter and a drizzle of strawberry syrup.

Milk Carton Agar Agar Pudding

Milk Carton Agar Agar Pudding

Difficulty: Easy • 10 Servings • Total Time: 2 Hours 30 Minutes

Ingredients:

  • 1 carton of milk, cut, rinsed and dried

for the avocado layer:

  • 2 ripe avocados
  • 2 cups milk
  • 2 teaspoons agar-agar powder
  • ½ cup granulated sugar

for the chocolate layer:

  • 4 oz. semisweet chocolate, chopped
  • 1 ⅔  cups milk
  • 1 1/2 teaspoons agar-agar powder
  • 1/4 cup granulated sugar

Directions:

  1. To make the avocado layer: Puree the avocados and set aside.
  2. In a small saucepan over medium heat, bring the milk and agar-agar to a boil, stirring often. Let boil continuously for three minutes, then whisk in the sugar. 
  3. Remove from heat, and combine with the pureed avocados. Pour the mixture into the milk carton mold, and let come to room temperature before transferring to the refrigerator to chill.
  4. To make the chocolate layer: Bring the milk and agar-agar to a boil, stirring to prevent the milk from burning. Let boil for three minutes, then whisk in the sugar and chopped chocolate.
  5. Pour the chocolate layer into the carton over the set avocado layer, and let cool slightly before transferring to the refrigerator to set completely, about 1 hour.
