Kahlúa Cold Brew Lemonade Pops

So Yummy

Yields 10 popsicles

Ingredients:

  • ½ cup lemon juice
  • ½ cup sugar
  • Small handful of mint
  • 2 cups warm water
  • Splash of cold brew
  • Splash of Kahlúa
  • Lemon slices, (optional)
  • Popsicle sticks

Directions:

  1. In a large measuring cup with a spout, juice lemons until you reach ½ cup. Take a handful of fresh mint and rub between your hands to release the oils. Add to the lemon juice. Add sugar and warm water and stir until the sugar has completely dissolved.
  2. To the mint lemonade mixture, add a splash of cold brew and splash of Kahlúa. Adjust based on personal preference. The more you add, the darker brown the popsicles will become.
  3. Pour the Kahlúa Cold Brew Lemonade mixture into a 10-piece popsicle mold. If desired, underfill the molds slightly and slide in a thin slice of fresh lemon for garnish. Freeze for one hour and then add in the popsicle sticks. Freeze until solid, around another 3 hours or overnight.
  4. Once frozen, gently warm the outside of the mold by running it under warm water. Slip the pops out and enjoy!
