Malibu® Cocktails You Can Enjoy Every Day of Summer x So Yummy

Longer days and warmer nights can only mean one thing… it’s officially summer! There’s no shame in logging off and ending the work week a little early so you can enjoy your “Summer Fridays”. You can even transform your backyard into a relaxing staycation, by crafting cocktails made with our favorite Caribbean rum.

We partnered with our good friends at Malibu® to bring you six new drinks that will help get the party started. Prep our Big-Batch Piña Colada Punch before inviting your friends over for an afternoon of sipping and sun tanning. You’re going to love these hassle-free recipes at your next cookout, because they’ll keep you out of the kitchen and in the pool — the way summer is meant to be enjoyed!

Skinny Piña Colada

So Yummy

Serves 1 person responsibly

 

Ingredients: 

  • 2 ounces Malibu® Coconut Rum
  • 2 ounces coconut water
  • 2 ounces pineapple juice
  • Cinnamon, lime wheel, pineapple leaf (for garnish)

 

Directions: 

  1. Fill shaker with ice. Add Malibu®, coconut water, and pineapple juice. Shake until outside of shaker is frosted.
  2. Pour into a glass and garnish!

 

Big Batch Piña Colada Punch

So Yummy

Serves 10-12 people responsibly  

 

Ingredients: 

  • 2 cups Malibu® Coconut Rum
  • 5 ¼ cups pineapple juice, (reserve ¼ cup for building the pineapple ring garnish)
  • 1 fifteen ounce can coconut cream
  • 2 cups club soda
  • 2 limes, juiced
  • Pineapple rings
  • Maraschino cherries

 

Directions:

  1. Lay pineapple rings onto a parchment lined baking sheet. Place a cherry in the center of each hole. Fill holes carefully with pineapple juice and freeze.
  2. Blend together coconut cream and pineapple juice until smooth. Add to a large punch bowl and stir in rum, lime juice, club soda.
  3. Serve, garnish, and enjoy!

 

Piña Colada Push Pops

So Yummy

Yields 16 push pops

 

Ingredients:

  • 1 pound pineapple, cubed
  • 1 fifteen ounce can unsweetened coconut milk
  • ½ 15 ounce can unsweetened coconut cream
  • 1 fourteen ounce can sweetened condensed milk
  • 2 limes, juice & zest
  • 1 tablespoon gelatin + ¼ cup warm water
  • 10 ounces Malibu® Coconut Rum

 

Directions:

  1. Blend all ingredients together until smooth.
  2. Pour into plastic ice pop sleeves and freeze on a flat and level surface, until solid. Serve cold & enjoy!

 

Miami Vice Smoothies

So Yummy

Serves 2 people responsibly

 

Ingredients:

  • 1 cup frozen strawberries
  • 1 ounce Malibu® Strawberry Rum
  • ½ cup coconut water
  • ¾ cup frozen pineapple
  • 1 ounce Malibu® Coconut Rum
  • ¼ cup coconut cream
  • 1 ounce pineapple juice

 

Directions:

  1. Blend frozen strawberries with strawberry rum and coconut water until smooth. Pour into two glasses to fill halfway.
  2. Blend remaining ingredients and top glasses off. Swirl with a toothpick to marble the layers together. Garnish and enjoy.

 

Piña Colada Ice Cubes

So Yummy

Yields 12-16 servings  

 

Ingredients:

  • 1/4 cup Malibu® Coconut Rum
  • 3/4 cup coconut milk
  • ½ cup pineapple juice

Directions: 

  1. Mix together coconut milk and Malibu®. Fill each hole of an ice cube tray ⅓ of the way up with this mixture. Freeze until solid, about two hours.
  2. Top with pineapple juice to fill the next ⅓ of the hole. Freeze.
  3. Fill remaining space in tray with coconut milk mixture. Freeze again.
  4. Add to a Malibu® cocktail of your choosing, and enjoy!

 

2-Ingredient Piña Colada Sorbet

So Yummy

Yields about 2 servings 

 

Ingredients: 

  • 1 pineapple
  • 2 ounces Malibu® Coconut Rum

 

Directions: 

  1. Slice pineapple in half and hollow out to form a “bowl.” Cube the removed pineapple and freeze until solid.
  2. Blend frozen pineapple and rum together until smooth. If mixture is too thick, add more rum.
  3. Once you’ve achieved a “scoopable,” ice cream-like consistency, scoop directly into pineapple bowls and enjoy!
