Ingredients:

  • Blue Diamond Nut-Thins® Cheddar Cheese Crackers
  • Blue Diamond Nut-Thins® Hint of Sea Salt Crackers
  • Blue Diamond Nut-Thins® Sriracha Crackers
  • 8 ounces cream cheese
  • Chopped Wasabi & Soy Sauce Flavored Blue Diamond Almonds
  • Chopped mango
  • Chopped cranberry

 

Directions:

  1. Roll a small ball of cream cheese between the palms of your hand.
  2. Place the cream cheese ball into the topping of your choice. Almonds, mango, cranberry.
  3. Pair with any Blue Diamond Nut-Thins® Crackers and enjoy!

 

Tapenade Bread Cups

Serving: 4-6

 

Ingredients: 

  • 2 cups kalamata olives
  • 1/3 cup Blue Diamond Almonds Sriracha Flavor
  • 3 cloves garlic
  • 1 ½ tablespoons lemon juice
  • 1/2 cup basil leaves
  • 1/2 cup olive oil
  • Sea salt or kosher salt

 

Directions: 

  1. Put all ingredients in a food processor. Process until mixture forms a coarse paste.
  2. Slice a loaf of baguette into 6 small sections. Scoop out the top center with a spoon, removing about a ½ inch.
  3. Fill the mini loafs with tapenade and veggies and serve.

 

Caprese Pizza Bites

  • 6 sliced mozzarella cheese (cherry sized)
  • ¼ cup cherry tomatoes
  • Basil

 

Directions:

  1. Slice cherry tomatoes into circles. Sliced cheese pearls into thirds.
  2. Assemble all ingredients onto Blue Diamond Nut-Thins® Cheddar Cheese Crackers as desired.
  3. Bake at 400 degrees F for 6 to 8 minutes or until the cheese is melted and bubbling. Serve immediately.

 

Wasabi Nut Mix

Serving: 2

 

Ingredients: 

  • 1 cup sugar
  • 1/4 cup water
  • ½ teaspoon coarse salt
  • 1 cup Wasabi & Soy Sauce Flavored Blue Diamond Almonds
  • 1 cup Blue Diamond Nut-Thins® Cheddar Cheese Crackers
  • ¼ cup ginger candy

 

Directions:

  1. Line a rimmed baking sheet with parchment.
  2. Cook sugar, water, and 1/2 teaspoon salt in a saucepan over high heat, stirring, until sugar dissolves. Continue to cook, without stirring, until golden, about 4-5 minutes. Remove pan from heat.
  3. Add almonds, Blue Diamond Nut-Thins® Cheddar Cheese Crackers and ginger candy. Immediately pour onto the baking sheet.
  4. Let cool completely, and break into pieces.

Directions:

  1. Cream cheese, prosciutto “rose”, microgreens.
  2. Goat cheese, arugula leaf, fig slices.
  3. Cream cheese, cucumber, salmon, dill.
