Delicious Chicken Fingers & Mac ‘n Cheese Recipe Hack!! So Yummy

Muffin Tin Ranch Mac n’ Cheese Cups

So Yummy

Yields 6 Servings 

Ingredients: 

  • 2 tsp Hidden Valley® Original Ranch® Seasoning and Salad Dressing Mix Shaker
  • 1 lb elbow macaroni
  • 4 tbsp butter
  • 2 tbsp flour
  • 3 cups milk
  • 1 cup grated cheddar
  • 1 cup monterey jack
  • Optional: seasoned bread crumbs, for a crunchy topping!

Directions: 

  1. Preheat oven to 350 degrees F, and cook pasta according to directions on package.
  2. While the pasta is boiling, stir together butter and flour in a small saucepan on medium low heat. After 2-3 minutes, stir in HVR Shaker Seasoning and milk, and whisk until all lumps disappear.
  3. Lower heat to low and mix in cheese. Stir until just melted. Fold in boiled pasta until combined. Let cool.
  4. As your creamy ranch mac n’ cheese cools, line a muffin tin with cupcake liners. Then using an ice cream scoop to portion mac n’ cheese into each tin. Top with bread crumbs if desired!
  5. Bake at 350 degrees F, until crispy and bubbly (about 15 mins). Serve warm and enjoy!

 

Crispy Ranch Chicken Fingers

So Yummy

Yields 4 Servings  

Ingredients: 

  • 4 boneless, skinless chicken breasts — cut into strips
  • 2 tsp Hidden Valley® Original Ranch® Seasoning and Salad Dressing Mix Shaker
  • ⅓ cup flour
  • 2 eggs, beaten
  • 3 cups corn flakes
  • Cooking oil spray

Directions:

  1. Preheat oven to 400 degrees F.
  2. Combine corn flakes and HVR Shaker Ranch Seasoning in a large ziplock bag, and crush lightly. Then, dredge chicken strips in flour, then egg, and drop into the ziplock. Shake strips vigorously until coated evenly (have fun with it!)
  3. Lay strips in an even layer on a tin foil lined baking sheet. Spray lightly with cooking oil, and bake for about 16-18 minutes, until golden brown. Serve with the Original Ranch®!
