  • 1. Preheat
    10 mins

    Preheat the oven to 400°F.

  • 2. Cook Pasta
    8 mins

    Break the dried pasta in half and place into a large mason jar. Add the salt to the mason jar and fill with enough water to cover the pasta. Microwave the jar, uncovered, for 8 minutes, until the pasta has reached al dente. It may be necessary to cook the pasta in 2 batches if using this method. Drain the pasta and transfer to a large mixing bowl.

    Add the eggs, parsley, bacon, half of the parmesan, and extra-virgin olive oil and toss until everything is well combined.

  • 4. Transfer

    Transfer half the pasta mixture to a greased 10” springform pan. Arrange the pasts in an even larger in the pan and push some up against the sides of the pan.

  • 5. Cover
    8 mins

    Add the wheel of brie in the middle of the bottom layer of pasta and cover with the remaining pasta mixture. Be sure to tuck the pasta around the side of the brie. Sprinkle the remaining parmesan cheese over the top layer of pasta.

  • 6. Bake
    50 mins

    Bake for 50 minutes, until golden brown.

  • 7. Serve
    15 mins

    Let the pie cool for at least 15 minutes before removing the ring on the springform pan. Serve the pie while warm, but not too hot as the brie may run out.
