Butternut Squash Mac and ‘Cheese’

    To a large microwave-safe bowl, add the 2lbs cubed butternut squash, diced onion, minced garlic, salt, pepper, and 2 cups chicken stock.

    8 mins

    Place a large plate over the top of the bowl and microwave for 8 minutes, until cooked through.

     

  • 3. Blend
    3 mins

    Once slightly cooled, carefully pour the mixture into a blender and blend until smooth.

     

  • 4. Pour

    Pour the mixture over top of cooked macaroni and stir to combine.
