Cauliflower Arancini

  • 1. Preheat

    Set your oven to 350* F

  • 2. Pulse
    5 min

    Pulse 1 head of cauliflower in a food processor until it reaches a rice-like texture.

  • 3. Add
    3 min

    Add 1 egg, 1/2 cup of parmesan cheese, 2 tbsp of basil, salt and 1/2 tsp of pepper and combine well.

  • 4. Scoop
    10 mins

    Scoop ¼ cup-fulls of the cauliflower mixture and flatten into a disc in the palm of your hand. Add a small cube of mozzarella cheese to the center of the disc and shape the cauliflower into a ball around it.

  • 5. Dip
    5 mins

    Dip the ball into the whisked egg, then roll it in gluten-free breadcrumbs.

  • 6. Place
    25 mins

    Place the arancini on a parchment lined baking sheet and bake them for 25 minutes until golden.
