Charred Citrus Wild Alaska Pollock Lettuce Wrap
1. Preheat10 minutes
Preheat grill to medium-high heat.
2. Slice5 minutes
Slice the stem and bottom end of a grapefruit so opposite sides of the fruit have flat edges. Slice the grapefruit in half and transfer to grill, flesh side down.
3. Place2 minutes
Place 1 pollock steak on top of the grapefruit halves and top with jalapeno slices.
4. Cook12 minutes
Close grill head and cook for 12 minutes.
5. Rest5 minutes
Remove fish and grapefruit from grill and let rest 5 minutes.
6. Repeat20 minutes
Repeat with remaining grapefruit, fish, and jalapeno slices.
7. Serve5 minutes
To serve, place the fish on a butter lettuce leaf and top with a squeeze of grilled grapefruit, red onion, and microgreens.
