Crispy Fried Wonton Better Than Takeout

Mix 1/2 lb of ground pork in a bowl with 1 cup of minced cilantro, 2 stalks of minced scallions, 1 cup of minced carrots, 2 cloves of minced garlic, 1/2 tbsp of soy sauce, 1/4 tsp of ground white pepper, and 1/4 tsp sugar. Mix it together well. Add 1 tbsp of water and 1/2 tbsp of cornstarch to thicken the texture. Mix it well, set it aside.

Place a wonton wrapper flat on your palm. Scoop the mixture and place it in the center of the wrapper. Fold the edge of the wrapper into a triangular shape, covering the mixture, then seal the edges closed using water. Push the mixture upwards to create a bulge in the middle then fold the two side edges together in the back to seal the wonton.

Heat up the pot, add 5 cups of vegetable oil and wait until it heated. You can check if the oil is hot enough by dipping a wonton into the oil; if it sizzling, it means it is ready to go. Add a couple wontons to the hot oil, turning occasionally until they are golden brown. Remove them and put them on a plate with a paper towel to absorb the oil. Serve them with Thai sweet chili sauce.
