Easy No-Yolk Pad Thai
Set your oven to 350°F.
2. Skewer & Bake20min
Skewer your whole chicken tenders on wooden skewers and brush both sides with sweet chili sauce. Then, for easy kebabs, slice them into individual skewers. Bake the chicken until golden and cooked through, about 20 minutes.
3. Cook Noodles
Meanwhile, cook your noodles according to the package instructions and drain, then set aside.
4. Make Sauce
In a small bowl, combine the sauce ingredients and mix well, then set aside.
In a large saucepan, set over medium heat, combine oil, garlic, scallions, shredded carrots and garlic chili sauce and sauté for one minute.
Make a well in the center of the mixture and add the egg whites to the well. Scramble the whites and incorporate them into the carrot mixture.
Add the cooked noodles, sauce, bean sprouts, peanuts and scallions, and cook until noodles absorb sauce and turn slightly darker in color – about 4-5 minutes.
Serve with chicken skewers, more chopped peanuts and bean sprouts, cilantro and lime wedges.
