French Meringue

    Separate the eggs.

    Place the whites in the bowl of a stand mixer with the whisk attachment.

  • 3.

    Discard the yolk.

  • 4.

    Start whipping the egg whites on low speed until frothy.

  • 5.

    Slowly add the sugar in two additions when it turns foamy. Increase the speed to medium.

  • 6.

    Continue to whip until shiny, firm and stiff peaks form.

  • 7.

    Use immediately.
