    In a large pot set over medium-high heat, combine uncooked noodles, all the vegetables, garlic, ginger, salt, red pepper flakes, soy sauce, and vegetable broth, and bring to a simmer. Cover with a lid and cook until liquid is mostly absorbed and noodles are cooked through, about 12 minutes.

    Add the shrimp, cover the pot again and cook for further 3 minutes, until shrimp are pink and cooked through. Toss everything to combine and serve with lime wedges.
