Pear & Brie Lattice Pastries
Preheat oven to 375˚F. Line a baking sheet with parchment paper.
2. Cut and unfold
Cut the brie into 2 ½” long pieces. Unfold each piece of thawed puff pastry and cut each into 4 equal squares.
3. Add pear
Place one piece of brie diagonally onto 4 of the pastry squares, then top each with a halved pear.
4. Create slits
Using a very sharp knife, create slits in the other 4 pastry squares. We alternated between cutting 1 row of 4 longer slits, then a row of 5-6 shorter ones.
Carefully lift the cut pastry and gently pull the slits apart to create separation. Lay each piece overtop of the pears and crimp with a fork. Cut off any excess dough.
Freeze for 10 minutes, then brush with beaten egg white and bake for about 40 minutes, until golden brown and cooked through. These pastries are best served slightly warm!
