    Place the sugar and water in a medium skillet over medium heat.

    Bring to a boil – it will make small bubbles and then get thicker – about 2 minutes.

    Add all the almonds stirring constantly using a wooden spatula to coat.

    The sugar will melt and transform into a fine powder and then melt again.

  • 5.

    These are the transformation steps of the sugar.

    Mix at all times.

  • 7.

    It takes a few minutes – about 5 minutes.

    When all the sugar has dissolved, spread the mixture on a silicone mat. Let cool completely.

    Place the now caramelized almonds in the bowl of a food processor.

  • 10.

    Pulse until combined – it will form a ball and then become softer.

  • 11.

    Scrape the sides of the bowl as needed.

  • 12.

    The whole process takes about 6 minutes.

  • 13.

    Transfer to a glass jar.

  • 14.

    Store in the refrigerator for up to 3 months.
