Red Velvet Oreo Lava Cake Recipe

    Set your oven to 400°F.

    Divide the sandwich cookies and split the cream filling from the wafers. Reserve wafers for later use.

    Cream the sandwiches cookie cream fillings with 8oz of cream cheese, until smooth. Scoop 12 1-tbsp mounds onto a greased baking sheet, and freeze for 30 minutes.

    Meanwhile, combine 2 cups of flour, 3 tsp of cocoa powder,1/2 tsp of baking soda and 1/2 tsp of salt in a large bowl, and mix to combine. Add 1 cup of melted butter, 1 cup of sugar, 3/4 cup of buttermilk, 3 tsp of red food coloring, 1 tsp of vanilla, 1 tsp of apple cider vinegar and 2 egg yolks, and mix until a smooth batter forms.

    Divide the batter evenly in a greased muffin tin and press one frozen cream filling into the center of each. Use the back of a spoon to smooth the batter over the top, so the filling is completely covered.

    Top the cakes with the reserved cookie wafers and bake for 12 minutes, until cake is set and filling is runny and melted.
