Rustic Pesto Ronzoni® SuperGreens® Rotini
1. Pesto Note:
This pesto is made by finely chopping all of the ingredients together with nothing more than your knife and your cutting board! However, if you prefer to speed things up, you can use a food processor.
2. Chop10 minutes
Place the baby spinach, herbs, pistachios, peas, garlic, Parmesan cheese, and olive oil onto a medium sized wood cutting board and finely chop, until all of the ingredients are broken down and the olive oil and cheese start to form it into a paste.
3. Boil8-10 minutes
Boil the Ronzoni® SuperGreens® Rotini in a large pot of boiling water according to the instructions on the box, then drain and return to the pot.
4. Stir5 minutes
Stir the pesto into the cooked pasta and season with salt and pepper to taste.
5. Divide & Serve5 minutes
Divide among 4 bowls and sprinkle with more Parmesan cheese before serving.
