Make the pâte à choux.
2. To make the filling:
- To make the filling: place all the ingredients in a food processor. Blend until combined.
- Fill in a pastry bag fitted with a small star tip.
- Cut a small hole at the bottom of each chou using a small knife.
- Fill the chou with the cream.
- Top each chou with more cream.
- Garnish with fresh dill and crushed red pepper.
