1. Layer Different Color Dough Together
On a lightly floured surface, cut both sheets into squares about 2”x2” in size. Layer one green square with one blue square overlapping by about ½”, and press with a rolling pin to combine.

2. Mix Together Filling
Mix together the cheeses, garlic, and herbs, then transfer to a sandwich bag with the corner cut off. Pipe a small amount of filling onto each rectangle and line with egg wash.

3. Cut Dough Into Circles
Fold each rectangle in half, pressing gently to seal and remove any air bubbles. Using a small ramekin, cut half circles from the dough.

4. Fold and Boil
Fold up around the handle of a wooden spoon, and firmly press the corners together. Slide your tortellini off the spoon, and boil for 5-7 minutes or until al dente.
