Easy Vegan Tacos

  • 1. Combine
    3 mins

    In a food processor, combine 2 cups walnuts and 4 cups cauliflower and blend until roughly chopped.

  • 2. Add
    2 mins

    Add in 1 tsp chili powder, 1 tsp ground cumin, 3 chipotle peppers in adobo, and salt.  


  • 3. Blend
    2 mins

    Blend again until the mixture resembles traditional taco meat.


  • 4. Bake
    40 mins

    Once the desired texture is achieved, place the mixture on a baking sheet and bake for 40 minutes at 375*F, stirring every 10 minutes.

  • 5. Assemble
    5 mins

    Using your tortilla of choice, place a scoop of the taco mixture onto the tortilla. Top with red cabbage, guacamole, dairy-free sour cream, and the juice of one lime wedge. Repeat with remaining tortillas.
