  4. Soak the second piece of rice paper and cover the apples. Press down lightly to seal, then roll up the edges. Score the center with a knife.

  3. Add ¼ of each of the diced strawberries, strawberry jam, and granola to the center of the rice paper.
  4. Fold the sides to enclose the fillings and cover with another piece of rice paper. Repeat for the remaining rice paper sheets to make four total.
  5. Place the assembled pop-tarts in an air fryer basket and cook for 5 minutes.
  6. Allow to cool slightly, then decorate with pink royal icing and sprinkles. Serve and enjoy!

Rice Paper Mochi

  1. Hydrate a piece of rice paper in lukewarm water, and drape it over a small bowl.
  2. Cut the mango horizontally, twist to open, and remove the seed. Dice the mango and place it in the center of the rice paper.
  3. Add a scoop of ice cream on top of the mango.
  4. Carefully gather the edges of the rice paper to enclose the filling, trim excess paper if necessary.
  5. Coat the mochi in cornstarch. Repeat with remaining ingredients, placing finished mochi in the freezer as you go. Freeze for at least 1 hour. Serve and enjoy your homemade mango mochis!
