Step-By-Step: Buffalo Ranch Nachos

Who doesn’t love nachos? There’s no wrong way to go about this classic appetizer. But here’s how to make your own at home with a touch of zest. And we’re not talking about using that cheese that comes out of a pump!

Zesty Ranch Chips Ingredients:

  • 10 corn tortillas
  • 1 tsp dried dill
  • ½ tsp garlic powder
  • 1 tsp paprika
  • ½ tsp onion powder
  • 1 tsp dried parsley
  • ½ tsp salt
  • Vegetable oil for frying

Buffalo Chicken Ingredients:

  • 2 cups cooked chicken, chopped
  • ½ cup buffalo sauce
  • 2 tbsp ranch dressing

Toppings Ingredients:

  • 1 cup cheddar cheese
  • ½ cup sliced red onion
  • ¼ cup cilantro
  • ¼ cup diced tomatoes
  • ¼ cup scallions
  • ranch dressing

Before we begin working on our chips, heat some vegetable oil to 350°F. While the oil is warming up, stack your corn tortillas on top of each other and slice into sixths for quick and easy chips! We used a combination of white and yellow corn tortillas. Feel free to use red or blue corn tortillas for an extra pop of color in your nachos.

Once the oil is ready, add the sliced tortillas and fry for about 1-2 minutes, or until golden and crispy. Be careful when adding them to the hot oil! Be sure to not drop them in quickly as to avoid hot oil from splashing out and potentially burning you! Trust me, that’s not fun.

Use a wire skimmer to carefully remove the chips from the fryer. Let the excess oil drain on a paper towel before transferring them to a mixing bowl.

Now we’re going to make our “zesty ranch” seasoning! In a small bowl, add 1 tsp dried dill, ½ tsp garlic powder, 1 tsp paprika, ½ tsp onion powder, 1 tsp dried parsley, and about ½ tsp of salt. Combine until the ingredients are thoroughly mixed.

Add the zesty ranch seasoning to the chip in the box and toss them until they’re coated to your liking.

Buffalo Ranch Chicken Instructions:

Let’s move on to our buffalo ranch chicken! In a separate bowl, mix together 2 tbsp ranch dressing and ½ cup buffalo sauce.

Pour the buffalo ranch mixture into a bowl of diced, cooked chicken and stir until combined.

Let’s get building! Grab a baking sheet and some parchment paper. Spread out your chips on the sheet.

Next, layer cheddar cheese, buffalo ranch chicken, red onion, and cilantro. Continue layering the nachos until you have used up all the ingredients. Bake your masterpiece at 350°F for 15 minutes.

Once the nachos are baked, top with the diced tomatoes, chopped scallions, and a drizzle of ranch dressing.

I don’t know about ya’ll but my mouth is watering. I’m already begging for that cheese pull! The addition of the buffalo ranch chicken is the perfect substitute for ground beef. I’m also a veggie girl so I’m definitely going to be loading mine up with tons of tomatoes and green onions!
