Grilled Fajita Nachos

Prep Time: 20 minutes
Total Time: 30 minutes
Servings: 4

Ingredients: 

  • 1 flank steak
  • 32 oz apple juice
  • 1 package taco seasoning
  • 1 bag chips
  • 2 cups mexican blend cheese
  • 1 green bell pepper
  • 1 yellow bell pepper
  • ½ onion
  • 2 jalapenos

Directions: 

  1. Marinate steak in apple juice for 15 minutes in the fridge. Season steak with taco seasoning. Grill 4 minutes each side over direct heat. Grill another 5-10 minutes until done over indirect heat.
  2. Season and grill vegetables. Layer chips into a cast iron pan, top with cheese, grilled vegetables, steak, more cheese and top with jalapenos.
  3. Cook layered chips on the grill until the cheese is melted for about 2 minutes.

Smoky Margherita Pizza

Total Time: 20 minutes
Servings: 2

Ingredients: 

  • 8 oz ball of pizza dough
  • ½ cup pizza sauce
  • 1 mozzarella ball
  • ⅓ cup parmesan
  • basil

Directions:

  1. Prepare all toppings.
  2. Place grey coals to one side of the grill. Place rolled out dough over direct heat and cook for 45 sec. Move dough off direct heat and top with pizza sauce, mozzarella, basil and parmesan. Grill for another 7-9 minutes.
  3. To prevent sticking to grill, brush dough with a lite layer of olive oil.

Grilled Watermelon Mocktail

Total Time: 30 minutes

Ingredients:

  • 5 cups watermelon, grilled and skinned
  • 1/4 cup fresh lime juice
  • 1/4 cup fresh mint leaves
  • 1/4 cup agave

Directions:

  1. Grill watermelon on grill for 4 minutes each side.
  2. Remove skin and add to a blender. Add lime juice, agave and mint leaves. Blend until smooth.
  3. Can strain if you desire more juice texture.

Grilled Brie Board

Prep Time: 15 minutes
Total Time: 30 minutes
Servings: 4

Ingredients:

  • 1 brie cheese wheel
  • 1 cup olive oil
  • 1 sourdough baguette
  • 2 tbs butter
  • 2 garlic cloves

Directions:

  1. Place brie wheel in olive oil to let marinate while you prepare and slice your baguette. Spread butter on slices if desired. Add brie and bread to grill. Grill until visible grill marks about 2-4 minutes.
  2. Rub bread with garlic clove for flavor.
  3. Add grilled brie and bread to a cheese board with your favorite meats, fruits and nuts.

Beer Can Chicken

Prep Time: 15 minutes
Total Time: 1 hour 45 minutes
Servings: 4 – 6

Ingredients: 

  • 1 whole chicken about 5 lbs
  • 2 cans of beer
  • 2 tablespoons brown sugar
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/8 teaspoon chipotle chili powder
  • 2 tablespoons unsalted butter, at room temperature

Directions: 

  1. Open beer can and place it in a baking dish. Place the whole chicken on top of the can. Pour about a half of another beer can over top of chicken.
  2. Combine all spices and then add to room temperature butter and cover chicken completely with rub.
  3. Roast chicken 1 hour 15 minutes or until meat is fully cooked.
  4. Serve with your favorite sides.
