Ratatouille Vegetable Soup
Difficulty: Easy • 4 Servings • Total Time: 25 Minutes
Ingredients:
1 Tbsp oil
1 cup each of chopped eggplant, onions, yellow peppers and zucchini
2 cloves of garlic, minced
2 ½ cups water
1 can (14.5 oz.) diced tomatoes, undrained
1 jar (12 oz.) HEINZ HomeStyle™ Herbes de Provence Gravy
¾ cup shredded Parmesan cheese
Directions:
Heat oil in large saucepan over medium heat. Add chopped fresh vegetables and garlic; cook for 5 minutes or until crisp-tender, stirring frequently.
Add water, tomatoes and gravy; stir. Bring to boil; simmer over medium-low heat for 15 minutes, stirring occasionally.
Serve topped with cheese.
Risotto Primavera Skillet
Difficulty: Easy • 4 Servings • Total Time: 40 Minutes
Ingredients:
2 Tbsp butter, divided
1 cup cut-up fresh asparagus (2-inch lengths)
1 cup thin zucchini slices
1 cup long-grain white rice
1 jar (12 oz.) HEINZ HomeStyle™ Herbes de Provence Gravy
1 cup water
½ cup frozen peas
Directions:
Melt 1 Tbsp. butter in a large skillet over medium heat. Add asparagus and zucchini; cook 5 to 6 minutes or until crisp-tender, stirring frequently. Remove vegetables from skillet; set aside.
Melt remaining butter in the same skillet. Stir in rice, then the gravy and water. Bring to a boil; simmer over medium-low heat for 20 minutes or until rice is tender.
Return cooked vegetables to skillet along with the peas; stir. Cook for 3 to 4 minutes or until heated through, stirring frequently.
Black Eyed Pea Jambalaya
Difficulty: Easy • 4 Servings • Total Time: 35 Minutes
Ingredients:
2 Tbsp cooking oil
1 stalk celery, chopped
1 cup frozen bell pepper and onion strips, thawed
1 tsp Cajun seasoning
1 can (14.5 oz.) fire-roasted diced tomatoes, undrained
Melt butter in a large nonstick skillet over medium-high heat. Add mushrooms; cook for 10 minutes or until lightly browned, stirring frequently.
Add gravy and gnocchi; stir to evenly coat all ingredients with gravy. Simmer over medium-low heat for 5 minutes or until heated through, stirring frequently. Remove skillet from heat.
Stir in sour cream and mustard.
Sprinkle with parsley to garnish.
Tuscan White Bean Skillet
