Mini Taco Hand Pies

Difficulty: Easy • 6 servings • Total Time: 25 minutes

Ingredients:

  • WHOLLY® GUACAMOLE Classic Minis
  • 1 pkg pie dough
  • 1 cup ground beef, seasoned and cooked
  • 1 cup shredded cheese
  • egg wash (1 egg + 1 Tbsp water)

Directions:

  1. Preheat oven to 425ºF, and roll out pie dough on a floured surface.
  2. Cut the dough into twelve 3” circles. 
  3. On one circle of dough, spoon a small amount of ground beef and cheese. Top with another circle, and press to seal the edges. Repeat with remaining dough circles.
  4. Brush each hand pie with egg wash, then place on a lined sheet and bake for 10-12 minutes.
  5. Let cool slightly, then serve with WHOLLY® GUACAMOLE Classic Minis.

Rainbow Crudite

Difficulty: Easy • 2-4 servings • Total Time: 10 minutes

Ingredients:

  • WHOLLY® AVOCADO Smashed Avocado Cups
  • 1 red bell pepper
  • 1 orange bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 1 cup cauliflower florets

Directions:

  1. Cut the tops and ends from each bell pepper, then halve to make two arches in each color.
  2. Slice the arches into four strips. Arrange in a rainbow shape, adding cauliflower clouds at the ends.
  3. Serve with WHOLLY® AVOCADO Smashed Avocado Cups.

Taco Parfait All Day

Difficulty: Easy • 4 servings • Total Time: 10 minutes

Ingredients:

  • 4 WHOLLY® GUACAMOLE Chunky Minis
  • 1/2 cup ground beef, seasoned and cooked
  • 1/4 cup  beans
  • 1/4 cup corn
  • 1/4 cup pico de gallo
  • 1/2 cup lettuce, shredded
  • 1/2 cup cheese
  • 4 Tbsp sour cream

Directions:

  1. Evenly divide all ingredients between four mason jars, layering the heaviest ingredients first. 
  2. Rest a WHOLLY® GUACAMOLE Chunky Mini upside down on top of the jar opening, and use the ring of the lid to seal closed.

Holding Onto Summer Rolls

Difficulty: Easy • 4 servings • Total Time: 10 minutes

Ingredients: 

  • 2 WHOLLY® GUACAMOLE Classic Minis, frozen
  • 16 shrimp, cooked
  • 1 T lime juice
  • 4 rice paper wrappers
  • 1 cup vermicelli noodles, prepared
  • 1 cucumber, julienned 
  • 1 carrot, peeled and julienned
  • 4 leaves butter lettuce
  • ½ cup red cabbage, shredded

Directions:

  1. Toss the shrimp in the lime juice.
  2. Dunk the rice paper wrapper in water and stretch out on a clean flat surface.
  3. Add 4 shrimp and lay butter lettuce on top.  Then add a handful of vermicelli, topped by the rest of the chopped vegetables. 
  4. Roll to seal and serve alongside WHOLLY® GUACAMOLE Classic Minis.

Buffalo Chicken Wholly Guacamole Cones

Directions: Easy • 6 servings • Total Time: 30 minutes

Ingredients:

  • 2 WHOLLY® GUACAMOLE Spicy Minis
  • 3 Flour tortillas
  • 1 egg, whisked
  • 1 cup Buffalo sauce
  • 2 cup Chicken, cooked and shredded
  • 1 cup Cheddar cheese, shredded
  • ¼ tsp Salt
  • ¼ tsp Pepper
  • ¼ tsp Garlic powder

Directions:

  1. Preheat the oven to 375ºF.
  2. In a large bowl, add the chicken, cheese, buffalo sauce, and seasonings. Stir to combine.
  3. Cut each tortilla in half. Roll the tortillas into cones, and use a toothpick to seal the edges.
  4. Add about 2 tablespoons of the chicken mixture to each tortilla cone.
  5. Create a ring of tortilla cones on a parchment lined baking sheet.
  6. Bake until the edges of the tortillas are crispy, about 20 minutes.
  7. Serve the cones immediately with a big scoop of WHOLLY® GUACAMOLE Spicy Minis on each.

Egg Salad Sandwich Tacos

Directions: Easy • 6 servings • Total Time: 10 minutes

Ingredients:

  • 2 WHOLLY® GUACAMOLE Spicy Minis
  • 5 eggs, hard boiled
  • 2 Tbsp mayonnaise
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ tsp paprika
  • 6 slices white bread
  • 6 leaves butter lettuce

Directions:

  1. Use a cheese grater to shred the hard boiled eggs.
  2. Add to a bowl, and combine with the mayonnaise, WHOLLY® GUACAMOLE Spicy Mini, and seasonings. Mix well.
  3. Use the clean container from the WHOLLY® GUACAMOLE Spicy Mini to cut a circle from each slice of bread.
  4. Spoon the egg salad onto each bread circle. Add a leaf of lettuce, and fold to create tacos.
