Easy and Fast Meals to Make for Dinner This Week

Meatball Bliss

Pick up a bag of meatballs and keep them stored in your freezer. When you’re looking for a fast meal to make after class or work, thaw the meatballs and brown them over medium heat in coconut oil. There are three tasty and easy dishes to prepare:

Classic Meatballs & Pasta

Go classic and throw the meatballs over spaghetti and tomato sauce. To make a homemade tomato sauce, simmer fresh or canned tomatoes in a pot over medium heat for 30 minutes. Add lemon juice, salt, garlic, and onions to taste.

Pineapple Surprise

If you’re not in the mood for pasta, mix pineapple chunks, green peppers, and tomato chunks with soy sauce or liquid aminos in a skillet over medium heat for 15 to 20 minutes. Meanwhile, prepare a serving of brown rice. Once cooked, add the meatballs.

Alfredo & Mushroom

If neither of those dishes have you drooling, this one will. Throw a handful of mushrooms and broccoli into a skillet until the broccoli is soft and bright green. Using brown rice, serve meatballs sprinkled with mushrooms and broccoli and top alfredo sauce.

Honey is one of our favorite ingredients to use in our cooking. It doesn’t spoil too fast and a little goes a long way. Here are three easy recipes using a touch of honey:

Sweet & Sour Shrimp

Add broccoli to a skillet over medium heat and cook until bright green. Add coconut oil, honey, and soy sauce or liquid aminos to taste. In a pot of boiling water, cook frozen shrimp for 3-4 minutes. Mix cooked shrimp in with broccoli mixture and enjoy.

Honey Fried Chicken

In a bowl, mix together eggs, flour, salt, and pepper. Using free-range chicken, splash a teaspoon of water on each piece and dip into mixture. Place coated chicken in a large skillet with coconut oil or fryer and cook until brown. Once the fried chicken is finished, drizzle honey over each piece and place in an oven-safe dish. Cook on 300 degrees for 7-10 minutes.

Bacon Meets Honey

Pick out your favorite salad leafy greens (spinach is ours) and mix in a teaspoon of honey. While the leaves are marinating, cook 2-4 strips of bacon and chop into pieces. Throw the bacon into the salad and top with candied pecans, goat cheese, and a touch of balsamic vinegar. YUM!
