Start The Year Simply With These Delicious 2-Ingredient Recipes

The new year is here. While everyone is frantically trying to stay on top of their New Year’s resolutions, why not set your sights on simplifying things? We partnered with ShopRite to develop recipes that are easy to create and only require two ingredients. Instead of spending hours in the store with a mile-long shopping list, head over to your nearest ShopRite to pick up all of the simple ingredients you will need to cook impressive dishes such as homemade, gluten-free pasta and flourless, chocolate cake.

If you are following through with your resolutions and looking to eat healthier in the new year, try making the two-ingredient banana ice cream or the two-ingredient chocolate mousse. Both sweet treats taste like you’re indulging, without any of the guilt. Try out all of these two-ingredient recipes designed to help you start the year off, stress free!

2-Ingredient Flourless Chocolate Cake

So Yummy

Ingredients:

  • 1 large egg
  • 2 ounces semi-sweet chocolate, melted and cooled to room temperature

Preparation:

  1. Preheat the oven to 350°F and lightly grease a small cake pan.
  2. Separate the egg yolk and the egg white placing the yolk into a small bowls and the white into a large mixing bowl.
  3. Using a hand mixer, whisk the egg white until soft peaks form — about 2 minutes.
  4. In a separate bowl, whisk together the egg yolk and the cooled melted chocolate.
  5. Gently fold the whipped egg white into the egg yolk/chocolate mixture.
  6. Pour the batter into a lightly greased cake pan
  7. Bake for 20 minutes, or until the cake no longer jiggles or looks wet in the middle. Set aside to cool completely before slicing.

2-Ingredient Sweet Potato Buns

Ingredients:

  • 2 cups cooked sweet potato, mashed
  • 1 cup self rising flour

Preparation:

  1. Preheat the oven to 375°F.
  2. Place sweet potato in a bowl. Add the flour and stir with a fork until a ball forms (or you can mix with your hands).
  3. Knead the ball of dough with your hands on a lightly-floured surface until smooth, about 8 minutes, adding a sprinkle of more self-rising flour whenever it feels too sticky.
  4. Form the dough into ping-pong sized balls and place on a parchment-lined baking sheet, letting them rest for about 30 minutes before baking.
  5. Bake for about 15-20 minutes or until golden brown on top. Let cool and then slice to make sliders.

2-Ingredient Almond Butter Cookies

Ingredients:

  • 1 cup almond butter
  • 1 egg

Preparation:

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. Remove all but 1 cup of almond butter from the almond butter jar and whisk the egg into the jar with the 1 cup of almond butter until completely combined and smooth (or you can do this in a bowl if you prefer).
  3. Squeeze the batter out onto parchment, cutting individual portions off with a butter knife.
  4. Lightly press tops of cookies with the tines of a fork, making an X pattern.
  5. Bake the cookies, rotating trays halfway through, until golden brown for about 10 to 12 minutes. Let cool completely before enjoying.

2-Ingredient Chocolate Mousse

So Yummy

Ingredients:

  • 4.3 ounces chocolate chips
  • 1 cup liquid from canned chickpeas, about 1 can (save the chickpeas for another use)

Preparation:

  1. Melt the chocolate in a microwave until loose and creamy, then set aside to let cool.
  2. Pour the chickpea liquid (called “aquafaba”) into a large mixing bowl and beat with an electric mixer until fluffy and stiff, about 7 to 10 minutes.
  3. Gently fold the cooled chocolate into the whipped aquafaba until completely combined.
  4. Scoop the mousse into your desired glasses or containers, and refrigerate for at least 3 hours or up to 8 hours.

2-Ingredient Gluten-Free Pasta

Ingredients:

  • 1 cup shredded mozzarella cheese
  • 1 egg yolk

Preparation:

  1. Microwave the mozzarella in a medium glass bowl for 1-2 minutes, until completely melted.
  2. Allow the mozzarella to cool for 30 seconds.
  3. With a spatula, gently fold the egg yolk into the cheese until completely combined.
  4. Scrape the mozzarella/egg dough onto a parchment-lined baking sheet.
  5. Place another piece of parchment paper on top of the dough and press down with your hand until the dough is thin, or you can use a rolling pin.
  6. Refrigerate the dough until the top piece of parchment is able to be pulled off cleanly (about 10-15 minutes), then cut the dough into strips about the size of linguine.
  7. Place the pasta on a rack and refrigerate for at least four hours or ideally overnight.
  8. Place the pasta in simmering water for one minute.
  9. Drain into a colander and run cool water over the pasta to prevent sticking.
  10. Toss with your favorite sauce.

2-Ingredient Banana Ice Cream

So Yummy

Ingredients:

  • 2 ripe bananas, frozen
  • Add-ins like cocoa powder, pineapples, peanut butter, or coffee

Preparation:

  1. Place the 2 frozen bananas in a food processor and blend until creamy.
  2. Throw in your desired add-on and pulse again until just combined. Scoop out into a dessert bowl and enjoy immediately.

2-Ingredient Yogurt Bread

So Yummy

Ingredients:

  • 1 cup greek yogurt
  • 1 1/4 cup self rising flour

Preparation:

  1. Preheat the oven to 375°F.
  2. Place the self-rising flour in a large bowl. Add the yogurt and stir with a fork until a ball forms.
  3. Knead the dough with your hands on a lightly-floured surface until smooth, about 8 minutes.
  4. Add a sprinkle of water if the dough seems dry or a sprinkle of more self-rising flour if it is too sticky.
  5. Form the dough into your desired shape, make two slits on the top of the dough using a sharp knife for decoration. Let the dough rest on a parchment-lined baking sheet for about 30 minutes.
  6. Bake for about 25 minutes or until golden brown. Let cool slightly before cutting.
