And let us tell you: This Spicy Corn Cheese Fritters recipe is definitely Tariq-approved! I mean, it’s a big lump with knobs! Is there anything better?
Spicy Corn Cheese Fritters
Difficulty: Easy • 3 Servings • Total Time: 40 Minutes (30-minute resting time)
Ingredients:
- 1 cup All Purpose Flour
- 1 tsp Baking Powder
- 1 tbsp Butter (melted)
- 1 Egg
- ½ cup Whole Milk
- 1 pinch Salt
- ¼ cup Mayonnaise
- 1 Scallion (chopped)
- ¼ cup Kimchi
- 1 can Corn (strained)
- 1 cup Mozzarella (shredded)
Directions:
- Combine flour, baking powder and salt; stir to blend. Add egg and melted margarine; stir until well blended. Add milk (or fruit juice), mix well.
- Stir in your scallions, kimchi and corn. Let it stand for 30 minutes.
- Cook your batter by the spoonful in a well oiled pan on medium-high heat.
- On one fritter place some mozzarella on top and melt it. Then place another fritter on top. Repeat this process one more time.
- Enjoy!
