Macaron Christmas Tree

Ingredients:
- Egg Whites 75g
- Granulated Sugar 75g
- Powder Sugar 80g
- Almond Flour 95g
- Store bought frosting, for piping
- Christmas sprinkles
Directions:
- Start by combining your powder sugar and almond flour together. Sift and set aside.
- Separating the egg yolks from the whites, making sure the egg whites are clear of yolks. Add the granulated sugar to the egg whites and whip until you reach stir peaks.
- Once you reach stiff peaks, add your almond flour. Begin to fold. Fold gently and uniformly in order to avoid the mixture from over mixing. Once you see that the batter has mostly absorbed the flour, begging to test batter on the side of the bowl and if the batter slowly flows down the bowl, then it is ready to pipe on a baking sheet.
- Pipe each size of the tree in separate baking sheets lined with parchment paper. This is recommended in order to avoid overbaking some of the cookies while in the oven. Once pipped, set the cookies aside and let them air dry for about 30-45 minutes.
- Preheat the oven to 250F while you wait for the cookies to dry.
- Cookies are ready to go into the oven when you feel the top of the cookies are not wet.
- Place the cookies in the oven and bake for 15-18 minutes. Cookies should be released cleanly from the parchment paper.
- Once your cookies have cooled, you can begin to assemble. Using the largest cookie as the base, piping the frosting on top of each cookie and repeating the action until you build a tree shaped macaron tower.
