Vodkarita Slices

So Yummy

Serves 16 people responsibly

 

Ingredients: 

  • 2 parts Absolut® Watermelon
  • 1 ½ parts fresh watermelon or purée
  • ¾ parts lime juice
  • ¾ parts simple syrup
  • ¼ parts orange liqueur
  • Salt, cotija cheese, tajin, etc. (for toppings) 

 

Directions: 

  1. Cut hole in watermelon (large enough for the bottle) and funnel Absolut® Watermelon and all cocktail ingredients into the watermelon.
  2. Allow watermelon to sit for an hour.
  3. Slice watermelon into wedges and sprinkle with toppings to serve.

 

Boozy Watermelon Pops

Serves 8-10 people responsibly  

 

Ingredients: 

  • 5 cups of fresh watermelon chunks
  • 2 tablespoons sugar
  • 1/2 tablespoon fresh lime juice
  • 2 ounces Absolut® Watermelon
  • 2 cups cantaloupe purée

 

Directions:

  1. Remove part of the watermelon.
  2. Cut into cubes.
  3. Add to blender.
  4. Layer mixture into small paper cup with cantaloupe purée.
  5. Freeze until solid for at least 3 hours. 

 

Absolut® Watermelon On Tap

Serves 16 people responsibly

 

Ingredients:

  • Whole watermelon
  • 1/2 bottle Absolut® Watermelon
  • 1 pint strawberries
  • Mint
  • Sparkling water

 

Directions:

  1. Slice the top of a whole watermelon.
  2. Carve and scrape inside to hollow out watermelon set flesh aside.
  3. Place spigot at bottom of watermelon.
  4. Purée watermelon and strawberries – pour back into the hollowed watermelon.
  5. Add ½ bottle Absolut® Watermelon
  6. Finish with sparkling water – serve with mint sprig as garnish!

 

Boozy No-Churn Watermelon Ice Cream

So Yummy

Serves 8 people responsibly

 

Ingredients:

  • 2 cups heavy whipping cream
  • 1 1/1 cups sweetened condensed milk
  • ¼ cup evaporated milk
  • 2 teaspoons vanilla
  • 3 tablespoons Absolut® Watermelon
  • 3 tablespoons watermelon purée

 

Directions:

  1. Whip cream and vanilla to medium peaks.
  2. Add sweetened condensed milk, Absolut®, watermelon and evaporated milk.
  3. Freeze until solid for at least 3 hours. 
  4. Scoop to your liking.

 

Watermelon Bars

So Yummy

Serves 12 people responsibly 

 

Ingredients:

  • 1 box round vanilla wafers (12 oz.), finely ground
  • 1 stick unsalted butter, melted
  • 4 1/2 cups watermelon juice (from about 1/2 of a large watermelon)
  • ½ cup Absolut® Watermelon
  • 1/2 teaspoon lemon zest (from 1 lemon)
  • 1/2 cup fresh lemon juice (from 2 large lemons)
  • 1/2 cup sugar
  • 1/2 cup heavy cream
  • 4 small envelopes (1 oz. total) of unflavored gelatin, (see chef’s note)
  • 1/4 cup confectioners’ sugar or 1 cup whipped cream, for garnish

 

Directions: 

  1. Preheat the oven to 350 degrees F. Line a 13-by-9-inch baking pan with foil, leaving a 2-inch overhang on the long sides of the pan. Spray the foil with cooking spray. Mix the melted butter into the finely ground vanilla wafers and add 2 tablespoons of water. Mix well and press the crumbs onto the bottom of the prepared pan, forming a crust. Bake the crust for 20 minutes and allow to cool.
  2. Set aside 2 cups of the watermelon juice in a small bowl. In a large bowl, combine the remaining 3 cups of watermelon juice with lemon zest, lemon juice, sugar and heavy cream.
  3. Sprinkle the gelatin over the reserved 2 cups of watermelon juice. Allow to sit for 2 minutes so that gelatin can dissolve and begin to absorb liquid or “bloom.” After the gelatin blooms, heat it in the microwave for 2 minutes on high, or heat gently in a small pot over low heat on the stove top, until the gelatin has completely melted into the juice and the liquid is smooth.
  4. Add the watermelon juice with the melted gelatin to the larger bowl of juice from Step 3. Stir to combine. Gently pour the mixture over the prepared crust from step 2 and place in the freezer for 2 hours or until the mixture is firm. (Alternately, place the pan in the refrigerator and allow to set for 3 to 4 hours.)
  5. Keep in the refrigerator until ready to serve. Before serving, cut the watermelon bars into squares. If desired, sprinkle each serving with confectioners’ sugar or a dollop of whipped cream.
