Whether you’re making a breakfast scramble before your morning workout or cracking a couple into the batter of your favorite cake, eggs are something almost everyone always has in the kitchen. That’s why So Yummy has partnered with Eggland’s Best to search for the most delicious family recipes from across the country in the America’s Best Family Recipe Contest 2020! We’re asking home cooks to share how they use Eggland’s Best eggs in their favorite family recipes and the stories behind these dishes. From a family dinner at home to a brunch recipe set to impress relatives in from out-of-town, consumers can submit their delicious recipes using at least two EB eggs within four different meal categories:

  • Breakfast/Brunch
  • Appetizer
  • Main Course
  • Dessert

Caramelized Banana Chocolate Croissant Bread Pudding

Prep Time: 15 minutes
Total Time: 1 hour 15 minutes
Serving Size: 10-12

Ingredients:

  • 1 cup heavy cream
  • 1 cup caramelized banana
  • 1/2 cup whole milk
  • 1/2 cup sugar
  • 2 Eggland’s Best Eggs (large)
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of ground cloves
  • 5 cups cubed chocolate croissant
  • 3/4 stick unsalted butter, melted

Instructions:

  1. Preheat oven to 350°F.
  2. In a medium bowl, whisk together cream, milk, sugar, Eggland’s Best Eggs, salt and spices. Set aside.
  3. Toss chocolate croissant cubes with butter in another bowl, then add spices and toss to coat.
  4. Transfer to an ungreased 8-inch square baking dish and bake until custard is set, 25 to 30 minutes.

Crackin’ Juicy Lucy

Prep Time: 15 minutes
Total Time: 45 minutes
Serving Size: 8 

Ingredients:

  • 1 pound lean turkey
  • 2 garlic cloves, minced
  • ½ red onion, diced
  • 1 teaspoon red chilli flakes (optional)
  • ¼ cup of panko breadcrumbs
  • 8 large Eggland’s Best eggs
    1 tsp crushed chilli flakes
  • 1/2 teaspoon Paprika
  • 1 pinch salt
    • Optional: 
  • 8 whole grain buns, toasted
  • Alfalfa sprouts
  • Whole grain mustard
  • Provolone cheese

Instructions: 

  1. Finely dice the garlic, red onion and chili flakes (a food processor works well if you own one).
  2. In a bowl mix all the burger ingredients, using your hands, to form a large ball which has all the ingredients evenly distributed.
  3. Split the mixture into 8 smaller round balls, and use your hand to flatten into burger shapes.
  4. Create a hole in the center of the burger patty by pressing the egg into the center.
  5. Heat oil in a large, non-stick pan over medium heat.
  6. Add the burgers to the oil, and cook for 5 minutes on one side, until browned.
  7. Turn using a spatula and crack an Eggland’s Best egg into each center hole. Then, top with the provolone cheese.
  8. Cover the burger so the EB egg and cheese cook evenly, cooking for 5 more minutes on the other side — until browned and the Eggland’s Best egg has cooked through.
  9. Once cooked, remove from the heat and serve in a bun with your favorite toppings, such as whole grain mustard and alfalfa sprouts.

Eggs Benedict Over Butternut Squash Hash

Total Time: 35 minutes
Serving Size: 6

Ingredients: 

  • 1 medium butternut squash, shredded
  • 6 Large Eggland’s Best eggs
    • Optional: 
  • 1 cup Guacamole, store bought
  • 1/4 cup chipotle mayo

Instructions: 

  1. In a large bowl with shredded squash sprinkle salt and pepper and stir.
  2. In a skillet, scoop out a portion of the mixture and pan sear on each side until golden brown
  3. In a large pot bring water to a simmer, and poach Eggland’s Best eggs to your desired doneness.
  4. Spoon guacamole onto the hash and place a poached Eggland’s Best egg over top. Drizzle chipotle mayo and cayenne pepper for a kick

Quick Coddled Eggs

Prep Time: 15 minutes
Total Time: 1 hour 15 minutes
Serving Size: 10-12

Yield: 4 servings

Ingredients:

  • 8 ounces Oyster mushrooms, sautéed
  • 8 ounces spinach, sautéed
  • 4 ounces heavy cream
  • 4 Large Eggland’s Best eggs
  • 1 tablespoon of dill
  • 6 ounces Smoked salmon
  • ¼ cup capers
  • Sliced baguette (optional)

Instructions: 

  1. Fill a small jar with sautéed spinach, sauteed mushrooms, cream and Eggland’s Best egg.
  2. Close the lid and simmer for 10 minutes until the Eggland’s Best egg is cooked to your desired doneness.
  3. Open lid, and garnish with smoked salmon and capers.
  4. Serve hot & enjoy with toasted, sliced baguette for dunking!

Smashed & Stuffed Sweet Potato

Prep Time: 10 minutes
Total Time: 1 hour
Serving Size: 4 

Ingredients:

  • 4 medium sweet potatoes
  • Olive oil
  • 4 cloves garlic, crushed
  • Kosher Salt and Black Pepper to taste
  • 4 Large Eggland’s Best eggs
  • 6 ounces of plain goat cheese
  • ½ cup of roasted red bell peppers
  • Dill for garnish

Instructions:

  1. Preheat your oven to broil (or grill) settings to high heat.
    • Roast Method:
  2. Bake sweet potato pieces for 25-30 minutes, or until they are fork tender.
    • Smash:
  3. Lightly grease a large baking sheet or tray with cooking oil spray.
  4. Arrange sweet potatoes onto the sheet and using a mason jar to smash down the sweet potato bursting the skin (they will be soft, so try not to press too hard or they will end up breaking and mashed).
  5. Use a spoon to create a canal for the Eggland’s Best egg to lay.
  6. Bake for 8 minutes until they are golden and crispy.
  7. Remove from oven, garnish with roasted red bell peppers , goat cheese and dill.
