Easy Avocado Ice Cream
Difficulty: Easy • 4-10 Servings • Total Time: 3 Hours
Ingredients:
- 1 WHOLLY® AVOCADO Diced container
1 14-oz can sweetened condensed milk
1 cup heavy cream, whipped
Directions:
- Line a loaf pan with parchment paper.
- In a blender, combine WHOLLY® AVOCADO Diced and sweetened condensed milk until smooth. Transfer to a medium bowl.
- Gently fold in the whipped cream, and pour mixture into the prepared loaf pan.
- Freeze until solid, about three hours. Then, scoop and serve!
Guac Dogs
Difficulty: Easy • 4 Servings • Total Time: 20 Minutes
Ingredients:
- 1 bowl WHOLLY® GUACAMOLE Classic
- 4 APPLEGATE ORGANICS® THE GREAT ORGANIC UNCURED BEEF HOT DOG® hot dog
- 4 hot dog buns
- ¼ cup cotija cheese, crumbled, plus more for topping
- ½ cup Oaxacan cheese, shredded (substitute: mozzarella cheese)
- chopped green onion, for garnish
Directions:
- Set oven to broil around 450ºF with the rack in the center, and prepare a baking sheet with parchment paper.
- Combine the WHOLLY® GUACAMOLE Classic and cotija cheese.
- Spoon a layer of WHOLLY® GUACAMOLE Classic mixture into each hot dog bun. Top with Oaxacan cheese, an APPLEGATE ORGANICS® THE GREAT ORGANIC UNCURED BEEF HOT DOG® hot dog, and another layer of guacamole. Sprinkle some cotija on top.
- Broil for 4-10 minutes, keeping a close watch to make sure the buns don’t burn.
- Remove and serve while warm.
Taco Night Turkey Burger
Difficulty: Easy • 2 Servings • Total Time: 15 Minutes
Ingredients:
- 1 bowl WHOLLY® GUACAMOLE Spicy
- 2 APPLEGATE ORGANICS® Turkey Burgers
- ½ cup CHI-CHI’S® Thick & Chunky Salsa Medium
- 2 hamburger buns
- ½ cup Mexican cheese blend, shredded
- ½ cup shredded lettuce
- ¼ cup sour cream
- cilantro, for garnish
for the taco seasoning:
- 1 tablespoon chili powder
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- 1 ½ teaspoons cumin
- 1 teaspoon ground black pepper
- ¾ teaspoon chili flakes
- 1 teaspoon salt
- ¼ teaspoon dried oregano
Directions:
- First, combine all ingredients for the taco seasoning. Rub into both sides of the APPLEGATE ORGANICS® Turkey Burgers.
- Grill each burger over high heat until fully cooked, about 5 minutes each side.
- Next, assemble the burgers. On each bun, add a scoop of WHOLLY® GUACAMOLE Spicy, top with the grilled APPLEGATE ORGANICS® Turkey Burgers. Add a layer of cheese, CHI-CHI’S® Thick & Chunky Salsa Medium, shredded lettuce, sour cream, and finally a sprig of cilantro.
- Replace the top of the bun, and serve!
Grilled Shrimp Bites
Difficulty: Easy • 4-8 Servings • Total Time: 20 Minutes
Ingredients:
- 1 bowl WHOLLY® GUACAMOLE Chunky
- 1 pound raw shrimp, peeled and deveined
- ½ cup olive oil
- 1 teaspoon cayenne pepper
- 1 teaspoon garlic powder
- 1 teaspoon pink peppercorns, crushed
- ½ teaspoon pink salt
- 1 cucumber, sliced into ¼ inch rounds
- lime wedges, for serving
Directions:
- In a small bowl, whisk together the olive oil, cayenne, garlic, peppercorns and salt.
- Add shrimp to marinade and toss to coat.
- Skewer shrimp, and grill until fully cooked, about 3 minutes per side.
- To assemble, take one slice of cucumber, add a heaping scoop of WHOLLY® GUACAMOLE Chunky, and top with a shrimp. Serve immediately with lime wedges.
Mini Avocado Cheesecakes
Difficulty: Easy • 4 Servings • Total Time: 1 Hour
Ingredients:
- 4 WHOLLY® AVOCADO Chunky Avocado Minis
- 1 cup graham cracker crumbs
- 2 tablespoons butter, melted
- 1 package cream cheese, softened
- ½ cup granulated sugar
- 1 cup heavy cream, whipped, plus more for garnish
- lime slices, for garnish
Directions:
- First, prepare the crusts. Mix together the graham cracker crumbs and butter, then press into the bottom of each mold. Chill while preparing the next step.
- In a large bowl, add WHOLLY® AVOCADO Chunky Avocado Minis cream cheese and sugar. Beat with a hand mixer until smooth.
- Gently fold in whipped cream. Spoon mixture over chilled crusts and return to the fridge for at least 30 minutes, or up to two hours.
- Before serving, add a dollop of whipped cream and a lime slice. Enjoy!
