Cool Down This Summer with Cookie Ice Pops

Do you know what’s better than cookies and milk? Cookies and ice cream.

With this simple recipe, you can turn your favorite cookie snack pack into a delicious ice cream bar to enjoy on hot days! And, with this heat wave, we know you’re going to be busting out this popsicle every single day.

Cookie Ice Pops

Difficulty: Easy • 3-4 Servings • Total Time: 8.5 Hours

Ingredients:

  • 1 can (14oz) sweetened condensed milk
  • 1 cup whole milk
  • 1 cup heavy cream
  • 3-4 small packages cookies
  • 3 (4oz) bars of white, milk chocolate and/or dark chocolate
  • Sprinkles (optional)

Directions:

  1. In a large measuring cup, whisk together the first 3 ingredients
  2. Crush up individual serve packages of your favorite cookies, cut open the bags, remove any interior packaging and pour the liquid mixture into each package. Place a popsicle stick into each package, sticking out just enough to hold the pop once frozen.
  3. Freeze for at least 8 hours or overnight.
  4. Melt each chocolate bar separately and dip each frozen bar into your desired chocolate pairing (you can also pour or spoon the melted chocolate onto the bars).
  5. Top with sprinkles right away if using.
