Log Stack Cake

We know it may be October, but it’s never too early to get ready for the holidays! Whether it’s a Halloween, Thanksgiving, or Christmas get-together, this tasty Log Stack Cake will have your guests super satisfied!

Log Stack Cake

Difficulty: Medium • 15 Servings • Total Time: 1 Hour

Ingredients:

  • 2 cups of Cherries – chopped and pitted
  • 2 sticks of Unsalted butter – softened 
  • 1 cup of Sugar 
  • 8 Ounces of Sour Cream
  • 4 cups of All Purpose Flour
  • 1 teaspoon of Baking Powder
  • 1 Chocolate bar (topping)

Cream

  • 2 cups of Sour Cream
  • 1 cup of Sugar
  • 8 oz Mascarpone

Directions:

  1. Preheat the oven to 375 degrees Fahrenheit. Next, for a mess free way to make the log dough add softened butter and sour cream into a large plastic bag. Shake and massage the ingredients in the bag until combined. 
  2. Reopen the plastic bag and add flour, baking powder and sugar. Seal the bag and mix the ingredients together. Once combined, push dough to the bottom of the bag to make a large rectangle and let rest in the fridge for 25 minutes.
  3. While the dough is resting, pit and chop cherries. Set aside. If you do not have a cherry pitter here’s a pro tip! Use the back of a safety pin to punch through the top of the cherry and pull out the seed. 
  4. Next, divide the chilled dough into 15 equal pieces. Roll out dough in 3’’ by 5’’ rectangles and line cherries down the center of the rectangles. Pinch the dough closed to seal the cherries creating a log. Repeat this process with all 15 dough rectangles.
  5. Place logs on a baking sheet lined with parchment paper about 1 ½ inches apart. Bake for 20 minutes or until golden. 
  6. While the cookie logs cool you can make the sweet cream topping. In a medium sized bowl mix together sour cream, mascarpone and sugar. Whisk together until smooth.
  7. Time to stack your log cookies! Line up 5 logs and add the cream frosting evenly over the top. Next stack 4 logs, 3 and so on to create a  pyramid with cream between each layer. 
  8. Once the logs are stacked use the rest of the sweet cream frosting to cover the outside of the pyramid. 
  9. Lastly, take a vegetable peeler to a chocolate bar to create easy chocolate curls over the top of your beautiful Log Stack Cake! Enjoy!
