Spicy Corn Cheese Fritters

Difficulty: Easy • 3 Servings • Total Time: 40 Minutes (30-minute resting time) 

Ingredients:

  • 1 cup All Purpose Flour
  • 1 tsp Baking Powder
  • 1 tbsp Butter (melted)
  • 1 Egg
  • ½ cup Whole Milk
  • 1 pinch Salt
  • ¼ cup Mayonnaise 
  • 1 Scallion (chopped)
  • ¼ cup Kimchi
  • 1 can Corn (strained)
  • 1 cup Mozzarella (shredded)

Directions:

  1. Combine flour, baking powder and salt; stir to blend. Add egg and melted margarine; stir until well blended. Add milk (or fruit juice), mix well.
  2. Stir in your scallions, kimchi and corn. Let it stand for 30 minutes.
  3. Cook your batter by the spoonful in a well oiled pan on medium-high heat.
  4. On one fritter place some mozzarella on top and melt it. Then place another fritter on top. Repeat this process one more time.
  5. Enjoy!
