  1. Mix all ingredients (without cocoa powder) together and let rest for 2 hours.
  2. Mix 2 cups of dough with cocoa powder. Set aside.
  3. Shape the rest of the dough into a batard or oval shape.
  4. Roll out chocolate dough into a disk with about ¼ inch thickness. Using a butter knife, make little slits, stretch out dough to create a lattice design. Place on top of the oval shaped dough.
  5. Let rest for 1 hour.
  6. Bake in a 425 degrees oven for 50 minutes to 55 minutes or until done.

  4. In the meantime, mix in cinnamon, butter and light brown sugar. Set aside.
  5. Roll out dough into a rectangle with a ¼ inch thickness. Evenly spread sugar mixture.
  6. Fold dough into thirds and cut into 24 pieces about 1 inch thick.
  7. Stack two pieces on top of each other. Using a chopstick, flatten the middle, fold in half and use chopstick to twist into a cinnamon bud.
  8. Bake in a 350 degrees oven for 25 – 30 minutes.

  4. Let rest for 30 minutes.
  5. Pipe the topping onto the rested dough.
  6. Bake in a 350 degrees oven for 25 – 30 minutes or until done
