  1. Using a latel over the stove top on medium heat add sugars and water.
  2. Carefully stir sugar and water as latel heats up.
  3. Once the mixture begins to turn an amber color add a teaspoon of baking soda. Mixture should bubble up rapidly so continue to stir until the bubbling subsides.
  4. Let the candy cool in the latel. Once it has cooled, tap it out of the latel and crush it with a meat mallet.
  5. This will create a delicious dessert garnish!

  1. Preheat your oven to 400 degrees fahrenheit.
  2. Next, on a cookie sheet lined with parchment paper make a line of cheese long enough to wrap around your jar. Bake cheese for 3-4 minutes or until melted and slightly golden.
  3. Let cheese cool slightly before carefully wrapping the cheese around the jar. Make sure to leave the parchment paper on the cheese and once wrapped leave to cool completely.
  4. Once cooled, pull out the jar and remove the parchment to reveal a parmesan roll!
  5. You can fill this parmesan cheese roll with a caesar salad to impress your guests!

  1. On a baking sheet lined with a silicone mat add a tablespoon of both the regular sweet potato and purple sweet potato puree.
  2. Using a spatula to smooth out the purees creating a teardrop effect. (note: Try not to mix the colors together while smoothing. You want a nice contrast between purple and orange.)
  3. Repeat the process to create 8 potato teardrops.
  4. Bake at 180 degrees fahrenheit for about 1 hour or until they are completely dry.
  5. Once cooled, carefully remove the tuiles from the silicone mat.
  6. You can use these sweet potato tuiles to garnish a plate of scallops or anything you would like for an added pop of color to a simple dish.

  1. Carefully pour 1 cup of boiling water onto the skin of a salmon filet.
  2. Next, pull the skin of the salmon off from end to end.
  3. Dry the salmon skin with a paper towel and add salt and pepper to taste.
  4. Add cornstarch evenly to a shallow plate and place skin on top of the cornstarch making sure it is covered entirely.
  5. Using tongs place the salmon skin into hot oil and fry on each side for about 1 minute or until crispy.
  6. Lastly, enjoy this creative garnish on a salad or in a salmon bowl!

  1. Layout soon plastic wrap on top of a Makisu (sushi rolling mat).
  2. Next, line up the spaghetti side by side on top of the plastic.
  3. In a bowl, mix together the ricotta cheese, mozzarella cheese, garlic powder, parsley, and pepper.
  4. Scoop the cheese mixture in the middle of the spaghetti.
  5. Roll the spaghetti like sushi and cut off the excess noodles.
  6. Slice the spaghetti roll ups and serve on a bed of marinara sauce.

Clear Potato Chips

  1. In a saucepan on medium heat let the potato stock come to a simmer.
  2. Add potato starch and salt to your saucepan. Using a whisk mix until a gel-like consistency forms.
  3. Once the gel consistency is thick, remove from heat.
  4. On a cookie sheet lined with parchment paper, scoop about 2 tablespoons of the mixture onto the sheet. Make sure each smoothed dollop is about an inch part from each other.
  5. Bake at 175 degrees fahrenheit for 2 ½ hours or completely dry.
  6. Once baked and out of the oven carefully remove the chips from the parchment.
  7. In a saucepan, heat up some oil. One by one, dip each chip into the hot oil for only a few seconds. (note: Take the chip out of the oil once it begins to pop.)
  8. Enjoy your beautiful glass-like potato chips!

Tapioca Pearl Crackers

Directions:

  1. In a saucepan on medium heat add tapioca and water. Mix until consistency is thick and gel-like (tapioca should be clear.) Remove from heat and strain tapioca.
  2. After straining, rinse the tapioca under cold water.
  3. Separate tapioca into three separate bowls. Add activated charcoal in one bowl, beet powder in another and curry powder in the last bowl.
  4. On a baking sheet lined with a silicone mat smooth out each different color of tapioca into a thin layer.
  5. Bake at 175 degrees fahrenheit for 3 hours or until completely dry.
  6. Once cooled, break apart crispy tapioca.
  7. In a pot of hot oil, add each piece of tapioca until it puffs up. This process should only take about 5-10 seconds.
  8. Enjoy your tapioca pearl crackers with tuna tartar or serve as a beautiful garnish.

  1. On a plate add about a tablespoon of the Raspberry cream sauce to the center of the plate.
  2. Then in the center of the cream sauce add a teaspoon of the regolar raspberry sauce.

  4. This can be paired with a dessert of your choice!

  1. On a plate use the sauce to make small circular drips framing one side of the plate.
  2. Next, run the tooth pick across drips to create a fun leaf design on the side of the plate. (make sure to run the toothpick through the center on the drips)
