Christmas House

  1. Carve the top of the chocolate pound cake, forming a triangular slope to mimic the roof of a house.
  2. Frost the pound cake completely with cocoa buttercream and refrigerate for at least 15 minutes.
  3. Meanwhile, create the door and windows. Use the butter cookies, decorated with white royal icing, to be the parts of the house. Make the rectangular cookie the door and the stars windows. Place the door on the front of the cake, and the windows on the longer sides. Decorate with sugar pearls and Christmas sprinkles.
  4. Simulate a wreath using a round peppermint, decorated with mini M&Ms. Finally, place ladyfinger cookies to simulate the roof. Pipe a little white buttercream on the top to simulate snow on the roof. Dust with powdered sugar, and there you go! The Christmas house will be ready to be the centerpiece on your table.

Snowman Cake Pop

  1. First, prepare the cake pop mixture. Mix together the leftover Christmas House cake with the cream cheese, shredded coconut, and spiced rum until it reaches a malleable consistency. Scoop into balls of two differing sizes, then refrigerate for 15 minutes.
  2. Form the snowman’s body by stacking two balls of different sizes, the smaller one on top. Completely cover with melted white chocolate and wait for it to harden.
  3. Use black candy melts for the eyes, orange candy melts for the nose, and red royal icing to create a scarf.
  4. Add a hat using a marshmallow painted black and supported with melted white chocolate. Do the same with the pretzel to simulate the arms.
  5. Let the candy melts harden, and there you go! The snowman is ready for the party.

Hedgehog Cookies

  1. Preheat the oven to 360ºF. Portion the cookie dough into eight 1 oz balls. Reserve one of the balls, and place the rest on a tray lined with parchment paper. Freeze for 15 minutes.
  2. Bake the cookies for 12 minutes, then let cool.
  3. With the reserved portion of cookie dough, make small dough balls and place 5 pieces on each cookie as the legs and nose of the hedgehog.
  4. Place the black candy melts in a piping bag and draw black dots for the eyes and nose of the hedgehog.
  5. Mix the chocolate sprinkles with the chopped peanuts. Dip the cookie halfway in the melted chocolate, and immediately coat with the combined chocolate sprinkles. Allow the chocolate to harden. Enjoy!

Yule Log

  1. Preheat oven to 360ºF.
  2. Beat the eggs together with the sugar, honey, and vanilla until it reaches the ribbon stage consistency. Fold in the sifted flour, cocoa, and baking powder. Pour the mixture onto an 11”x15” lipped tray, lined with parchment paper.
  3. Bake for 18 minutes. Remove from the pan and let it cool.
  4. Fill the cake with cream cheese buttercream and roll into a log. Cut a quarter from one end and place it aside to simulate the organic shape of a log.
  5. Cover the cake with chocolate ganache, and use a fork to create the wood grain texture. Refrigerate for 10 minutes.
  6. Place green cake crumbs on the serving dish as the base, then rest the log on top. Decorate with rosemary sprigs, raspberries, and Hedgehog-shaped cookies. Dust with powdered sugar for a snowy effect!

Meringue Tree

  1. To make the French meringue: Beat the egg white at medium speed and gradually pour in the granulated sugar. Once it has doubled in size, add the cream of tartar and cornstarch. Mix well and transfer to a piping bag with a round tip.
  2. Preheat the oven to 230ºF.
  3. On a baking sheet with parchment paper, pipe 5 rings of meringue in different sizes. Pipe small amounts of meringue from the ring towards the center, creating a circle with a raised edge, almost a  bowl shape. Bake for 70 minutes. Remove from the oven, and let cool.
  4. Place the largest diameter meringue as the base, fill with the cream cheese buttercream, berry compote, and sugared cranberries. Repeat with each meringue. Decorate with sprigs of rosemary, and serve!

Chocolate Reindeer

Ingredients:

  1. Transfer the melted dark chocolate to a piping bag. Pull up a reindeer image on your phone and place it inside a plastic bag. Trace the outline of the reindeer with melted chocolate. You can also freehand the design! Let it harden, then peel off the plastic. Repeat five more times.
  2. Dip the graham crackers in green candy melts. Attach the chocolate reindeer and add green sugar pearls for decoration. Let it harden.
  3. On a board, spread Nutella over the entire surface. Add green cake crumbs to simulate grass and shredded coconut to simulate snow. Place the reindeer on the board, then serve!
