Frozen Burrata Caprese

  1. Freeze the tomato overnight for approximately 12 hours.
  2. After 12 hours, cut your burrata cheese through the center without slicing it completely.
  3. Grate the frozen tomato over the center of the burrata cheese.
  4. Drizzle olive oil and balsamic glaze, then add sea salt, lemon zest and basil leaves.
  5. Serve with cherry tomatoes and toasted crostini, and enjoy!

Dalgona Madeleines

  1. Grease a madeleine mold and set aside.
  2. Boil water and sugar in a pot at medium temperature without stirring until the edges are yellowish.
  3. Mix slowly, add baking soda and stir for 3-4 minutes or until the mixture turns a light caramel color.
  4. Pour the caramel into each cavity of the madeleine mold. Place the madeleines in the mixture before it dries.
  5. Allow the mixture to harden, then unmold your dalgona madeleines and enjoy with your favorite hot drink!

Apple Cinnamon Rolls

  1. Grease a glass baking dish and preheat the oven to 400ºF.
  2. Arrange a layer of green apple slices in the bottom of the glass baking dish.
  3. Sprinkle brown sugar and powdered cinnamon on the apples.
  4. Add cinnamon rolls on top, and bake for 13-17 minutes, until golden brown.
  5. Invert directly onto a serving dish so the apple is visible on top.
  6. Frost, and enjoy!

  1. To make the matcha mascarpone cream: Beat heavy whipping cream in a mixing bowl until it starts to thicken. Add sugar, vanilla extract, and matcha, and continue to beat for 4-5 minutes, until stiff peaks form. Fold in mascarpone cheese and mix until combined. Set aside.
  2. Whisk together water and matcha powder in a bowl until the matcha is dissolved.
  3. Briefly dip the ladyfingers in the liquid, and then lay them in a single layer on the bottom of an 8×8” dish.
  4. Add half of the cheese mixture and smooth out with an offset spatula.
  5. Add another layer of dipped ladyfingers, then add the remaining whipped cream mixture.
  6. Use a mesh strainer to dust matcha powder on top.
  7. Refrigerate for at least 4 hours, up to overnight.
  8. Garnish with raspberry and mint leaves and enjoy!

Lasagna Bites

Ingredients:

Directions:

  1. Preheat the oven to 350ºF.
  2. Combine all the filling ingredients in a small bowl.
  3. Lay the cooked noodles out and spread 2 tsp filling on each noodle leaving about a 1/2 inch at one end.
  4. Roll the noodles up.
  5. Cut the rolled noodles in half widthwise.
  6. Spread 1 C Bolognese sauce on a casserole dish.
  7. Place the mini lasagna rolls on the casserole dish spaced apart evenly.
  8. Top with mozzarella cheese.
  9. Bake for 15-20 min or until the cheese is melted. Wait for it to cool, and enjoy!
