Directions:
Rest a strainer or sieve over a large bowl. Run 2 pieces of cheesecloth under water, then wring out. Line the sieve with the cheesecloth.
Add the milk, cream, and salt to a large pot. Heat over medium, stirring occasionally, until at a full boil.
Turn off the heat, add the vinegar, and mix well. Let stand for a minute or two while the mixture curdles.
Pour the mixture into the lined sieve, draining the liquid whey from the cheese curds. Let the cheese continue to drain at room temperature for 20-25 minutes, depending on how thick you want the ricotta to be.
Transfer the ricotta to a clean bowl, cover with plastic, and refrigerate immediately until use. Homemade Ricotta will last in the fridge 4-5 days. Try it on toast with minted peas!
