Fried Enoki Mushrooms

  1. Separate enoki into smaller pieces if the bunch is too big. Cut a strip of seaweed, coat with water and wrap it around the bottom of each enoki bunch. 
  2. Mix the cornstarch, garlic, paprika, and salt in a bowl. Coat each bunch in flour, then dip into the spice mixture. 
  3. Fry in oil until golden brown. 
  4. Let cool and enjoy with your favorite mayo!

Portobello “Steak”

  1. Remove the portobello stem and score the top to give it texture. 
  2. Heat a heavy-bottomed skillet over high and add oil. Add the portobello, scored side down and let cook. 
  3. Add butter, garlic and rosemary to the pan. Spoon the butter to baste the portobello as it cooks. Once the scored side is slightly browned, flip over. Once completely cooked remove from the pan.
  4. Cut the “steak” into slices and plate. Serve with a little blue cheese sauce and enjoy!

King Trumpet Scallops

  1. Cut the oyster mushroom stem so that each “scallop” is 1 ½ inches thick. 
  2. Score the top to have a grid pattern. 
  3. Heat a pan and add the butter. Once it’s slightly browned, lower heat and add mushrooms, scored side down. 
  4. Once that side is golden, flip and add vegetable stock, ketchup and vinegar. Let thicken. 
  5. Add scallions, sesame seeds, chili flakes and parsley. 
  6. Remove from heat, serve and enjoy!

Cheesy Mushrooms

  1. Using a straw, remove a circle from the mushroom stem. Use that same straw to remove a small cylinder of cheese from the block and place it in the mushroom hole.
  2. In a bowl. Mix flour and baking powder. Add beer slowly and mix until it has a thick consistency. Set up a plate with breadcrumbs and add italian herb mix. 
  3. Dip mushrooms in beer mix and immediately coat in breadcrumbs. 
  4. Fry in oil until golden and remove. 
  5. Serve with honey mustard and enjoy!

Mushroom “Bone” Marrow

  1. Preheat oven to 350°F.
  2. Remove the top of the king oyster mushrooms, leaving only the stem. Carefully cut the middle and scrape it out with a spoon to resemble a bone. Set aside the “filling.”
  3. Brush with oil, sprinkle with thyme and bake for 10 minutes. 
  4. In a saucepan, add the tops and reserved “filling” of the king trumpet mushrooms, and the additional mushrooms. Add butter, pinch of salt and thyme. Cook for about 5 minutes until the mushrooms release their water. 
  5. Place the cooked mushroom mix, cream cheese and olive oil in a container and blend with an immersion blender until smooth.
  6. Transfer mix to a piping bag and add to the hollowed out “bone”. Use a spatula to even the mix out. 
  7. Use a torch to give it a toasted look and serve with bread.

Mushroom Shawarma

  1. Preheat oven to 400°F. 
  2. Place the mushrooms in a hot pan and sweat them out until all the juice is out. Press them down as they’re cooking to make sure all liquid is removed. 
  3. Mix all ingredients for the spice mix in a bowl. Do the same for the glaze. 
  4. Transfer mushrooms to a pan and brush with spice mix on both sides. Stack them and stick the skewer into it so it doesn’t topple over. 
  5. Add glaze and bake for 10 minutes. Remove and add more glaze, cook for another 10 minutes. 
  6. Cut the sides of the shawarma and serve with pita bread, a Mediterranean veggie mix and sauce to dip!

Mushroom “Pulled Pork”

Ingredients:

Directions:

  1. Remove the stem from the mushrooms and pull the stems with a fork until you get the consistency of pulled pork. Season with salt and let rest to release excess moisture. Season with paprika, garlic and pepper. 
  2. Place in the So Yummy Bella Air Fryer basket and cook for 8 minutes. 
  3. Add in barbecue sauce. Mix well and place in the air fryer basket for another 5 minutes. 
  4. Serve in burger buns with coleslaw and pickles. Enjoy!

Maitake Mushroom Jerky

Ingredients:

Directions:

  1. Preheat oven to 325°F
  2. Divide maitake into medium sized bundles. 
  3. Mix the remaining ingredients in a bowl. Add the mushrooms and soak overnight. 
  4. Remove from bowl and place on a sheet pan lined with parchment paper. Place another tray on top to flatten. 
  5. Bake for 1 hour. Remove the top tray and let dry for another hour in the oven, turning the jerky over every 30 minutes. 
  6. Let cool, and enjoy your delicious jerky!
