Stuffed Fry Jacks

Ingredients
- Bowl and Basket Pepper Jack Cheese
- Wholesome Pantry Refried Black Beans
- 5 eggs (Scrambled)
- 2 cups all-purpose flour
- 3 teaspoons baking powder
- ½ teaspoon salt
- 1 tablespoon vegetable shortening
- ¾ cup water
- vegetable oil for frying
Instructions
- Add flour, baking powder, salt and shortening in a bowl. Mix until consistency is similar to sand.
- Add water, and mix until dough is soft and smooth. Let rest for 15 to 20 minutes.
- Lightly flour countertop, roll dough out into about 10 to 12 inches rounds. Cut each round dough lengthwise to create 2 half circles.
- Heat oil to 350 degrees fahrenheit and fry on each side until golden brown.
- Slice Fry Jack down the center and stuff a spoon full of Bowl and Basket Refried Black beans, scrambled eggs and top with Bowl and Basket Pepper Jack Cheese. Enjoy your breakfast fry jack!
