Ingredients
- for the stir fry filling:
- 3 oz cremini mushrooms, sliced
- ½ red bell pepper, diced
- ½ yellow bell pepper, diced
- ½ broccoli, cut into small florets
- 1 can baby corn, roughly chopped
- ¼ C soy sauce
- 1 tsp sesame oil
- for the empanadas:
- 1 pack flour tortillas
- ½ C shredded manchego cheese
- 2 eggs, for egg wash
- optional: salsa, for serving
Instructions
- First, make the filling. Place all vegetables in the Bella Air Fryer basket and coat with the soy sauce and sesame oil. Cook for 18 minutes, shaking every 4 minutes. Let the filling cool slightly before the next step.
- Brush sides of each flour tortilla with egg, then add a scoop of the veggie filling and a small handful of shredded cheese in the center. Fold in half, then use a fork to seal and score the edges of the empanada.
- Place inside the Bella Air Fryer basket and fry for 10 minutes.
- Let cool slightly, then serve. We like them with salsa!
