Recipe 1/5

Cooked Custard Coffee

15 Minutes

Easy

2 Servings

Ingredients:

Directions:

  1. In a small glass bowl or a mason jar, beat together your condensed milk and egg yolk until fully blended, the color of the condensed milk should be a uniform, pale yellow.
  2. Place your bowl or mason jar into the pot of boiling water to cook your custard, stirring often. You can use a double-boiler but it isn’t necessary and will take longer. The custard should take approximately 5 minutes to cook. You will notice a slight color change (a little more yellow) and it getting thicker as the egg yolk cooks. Remove and let it cool.
  3. Evenly fill two cups with your cooked custard. Carefully pour your coffee along the side of the cup to slip under and raise your custard.
  4. Dust each cup with a slight sprinkle of ground cinnamon for some added flair (and another “c”).

Frown Upside-Down Cupcake

30

Easy

1 Serving

Ingredients:

Directions:

  1. Roll a small piece of black fondant flat, and cut out two C-shapes – one for a “smile” and one for a “frown.” Let harden.
  2. Color divided buttercream black and yellow. Transfer the yellow into a piping bag fitted with a large round tip and the black into a piping bag with a small round tip.
  3. Pipe yellow buttercream onto the cupcake. Flip and press onto parchment to flatten, then freeze until solid.
  4. Flip cupcake back over and place the “smile” fondant sprinkle onto it. Cover with a small strip of acetate. Pipe another layer of yellow buttercream on top of the acetate to secure, then flatten the cupcake once more. Freeze again.
  5. Flip and place “frown” fondant sprinkle on the cupcake and add two black buttercream dots for “eyes.” Once frosting has reached room temp, peel back acetate strip to reveal a hidden smile underneath. 🙂

Recipe 5/5

Candy Mochi

10 Minutes

Easy

10 Servings

Ingredients:

Directions:

  1. Unroll each fruit roll up and lay fully flat on a half baking sheet or any flat surface you’re comfortable storing in the freezer.
  2. Using a small ice-cream scoop, add a scoop of ice-cream to each Fruit-Roll Up. If using slices of fruit, sprinkle them on now and tightly wrap the Fruit Roll-Up around the ball. You have to move quickly as the candy will freeze and become too brittle to move!
  3. Your mochi is ready to serve. You can store the Candy Mochi in the freezer, just make sure it’s sitting on the flattest side!
